Most marinated feta is cubed feta and a huge jar of olive oil. I just think it's so oily, you don't really taste the feta. So, what I've done is I've sliced the feta and I've made a spice mix to put on top and then a drizzle of olive oil. Let me show you how I made the spice mixture. All I did was put dried thyme into a bowl with dried fennel seeds, crushed red pepper flakes, and stirred them together her. Okay, I'm just going to sprinkle it right on. It's a good idea to do this early so the flavors really get into the feta. That looks great. Fantastic. Put a little bit of fresh thyme on it. Looks beautiful. It's going to be part of a bigger platter that has all kinds of Greek things on it. Next is olives. I'm using terrano olives. I love the sort of meaty flavor of them but you can use any olives you like. I think Jeffrey's going to love this. A drizzle of olive oil. One of the great things about this is you can really make it a few days ahead, really almost up to a week. So, it's got a little bit of oil but it's not like swimming in oil. Isn't it so great? Just serve it with pita bread or crackers. Little bit of salt. Sprinkle on top. Little bit of pepper. It's going to be so good with the lamb. Okay, into the fridge and it's ready for dinner. Making this wonderful Greek Mezza platter which starts with marinated feta right down the middle. One of the things I love most about this is it's basically an assembled first course. Just so wonderful. I bought roasted peppers. You don't have to roast them yourself. Just make sure they're really delicious. Just going to put them right on the platter. So that's the red peppers. I bought some stuffed crepe leaves. You can find them really in any grocery store. You can get a can of them or fresh ones. Just going to do grape leaves right here. I love these platters because they look so sort of luxurious and sumptuous but you don't have any cooking at all. My kind of cooking. None. So the next thing I bought is a little hummus. You can find that in any grocery store. I think I'll put it in a little bowl. I always think hummus looks a little boring when it's just sitting there by itself so I always think of something to put on top I've got toasted peanuts or some roasted garlic or just something to give it a little more texture so I've got toasted peanuts just put them right on top drizzle of olive oil it's really good really enhances the flavor Look how great that looks and to serve with this, I made some really good toasted pita chips. I cut pita breads into triangles. How easy is that? Put them on a sheet pan. Into the oven for 10 minutes at 350 degrees and voila, pita chips. Just put pita chips right on the platter. You can cut them up and not toast them but I just like the crunch of a crunchy pita crisp. Not bad.
