Y'all ready for this? Next, you're going to take rotisserie chicken and shred it up in your food processor or four chicken breast. Then, dump in one can of Rotel, one block of shredded Colby Jack cheese, half of a cup to one cup depending on how much sour cream you like right into your mixing bowl as well as half of a package of taco seasoning. I like to use the lower sodium seasoning because the cheese has a ton of salt in it. Just mix everything together until all of that chicken is fully coated in the sour cream cheese and rotel mixture. Set this aside and let's get to work. This is only going to take you about 10 minutes to put together. Put a scoop of that mixture onto each one of your tortilla half moons and roll it up to create a cone. Look at how cool these look. Only takes a second or two to line them out on the tray and put a thin coating of cheese. Now, I put a cup in the center of my tray just to kind of keep things on center. You don't have to do that. Just continue to move around and create three layers of your quesadillas. Then put this in the oven at 350 for about 15 minutes until everything's melted and browned. Make sure you take the glass bowl out if it's not oven safe. Then replace it, add some salsa, garnish with some cilantro, a slice of lime, and you are ready to serve. Okay, next we want to take some flour tortillas. We're doing the tenish tortillas. Okay. And I'm going to place two of them right in the bottom of our baking dish. Right into the sauce. Yep, right on top of the sauce. Just like that. Okay. Next, we're going to take our refried beans There we go. Perfect. Perfect. And I'm just using canned ones obviously. You can use pinto beans or make your own. Whatever. Yeah. Close your boat. Make it as fancy as you like. Exactly. Mm hmm. You do you. So now I'm going to taste some sour cream. I'm going to add that to our refried beans. Just a good amount. That looks great. Okay and a little salsa. I'm using the the hots pecan sauce because I we like it spicy. So I'm just going to I'm just going to kind of eyeball it. That looks good to me. Perfect. Okay, so you want to mix that up really nice. You can always add more if you think you want a little more sour cream or a little more spice. This is about the color and the texture that we want. Nice salmon color to it. Yeah, it looks yummy. Mm hmm. Okay, so we're going to put that on top of our tortillas. Going to get couple scoops spread it around. This is so easy you guys. It's just like you just layer it all up. Cover cover the tortillas. Easy peasy. Put some in that corner there. Mm hmm. Okay. For next layer, I'm going to add some ground beef and this I've just browned up in my pan with some taco seasoning Oh yeah. Look at that steam. Ah yummy. A little onion, a little taco seasoning. Now, we're just going to spread that out. This is going to be yummy. Oh yeah. That looks great. Mexican night. Yup. Tonight in our house. Of course, we've gotta have cheese. So, I'm going to add some of this Mexican blend. Give it a good shake here. Uh huh. Just going to add a little bit of this to the top of that. This is nice and cheesy. And delicious. Okay so now we're going to repeat. I'm going to take my tortillas. Layer. Yup. First layer is done. We're moving to the second layer. Yup and we want to add a little bit more of our enchilada sauce. So, I'm going to put that on top this time. Okay. Alright, yum. Next layer, beans, sour cream, salsa. Okay, so spread this out. Just get it all incorporated. If it looks a little wet on this layer, that's okay. We want it to be nice and juicy because it's going to kind of sink all in together. Okay, so next layer of ground beef. One more Spread that around. This is going to be delicious. Yep. Alright. Now we want more cheese. And actually have a little bit more of a this is the Mexican blend but then I'm also going to add on the top I've got another blend of cheeses this is like a Monterey Jack cheese for the top using up the leftovers you want it to be really cheesy Looks like a lasagna. Sure does. Mexican lasagna. That's what we're making here guys. Taco lasagna or. Sure. Tortilla lasagna. I don't know. Right. Okay. Next, I've got some chopped up green onion that I've just sliced up. Sprinkle that on the top. Give it some color. Love that. That looks beautiful. Okay. And now this is ready to go in our oven. So I've got the oven set at three fifty. We're just going to pop this in for about 45 minutes. In you go. Alright, our Mexican lasagna looks great. I actually had it in the oven for about an hour. So, it's it's definitely cooked. Little crisp up. Yeah, it looks really good and I think she'll let it sit for just a few minutes before we cut into it. Okay. Okay, let's cut into this lasagna. I'm just going to take a corner piece here. Ooh, that looks good. Mm hmm. These tortillas are a little nice and crisp. Yeah, a little crispy which is what we want. Yeah. Gotta have a little crisp crispness. We'll just. Oh yeah. Here we go. Look at that. Ooh. Alright. Whoop. That looks so good. Wow. Gonna serve it up with a few chips here. That looks great. Now, I'm going to add a little bit of this oops, a little guacamole. Alright. So, we're just going to put a little bit of that on top as a finishing. Of course. This is a finishing touch.
