Quinoa and Black Bean Salad  Ingredients: - 1 cup quinoa - 2 cups water - 1 can black beans, rinsed and drained - 1 red bell pepper, diced - 1/4 cup chopped fresh cilantro - 1/4 cup lime juice - 1 tsp cumin - Salt and pepper to taste - 2 tbsp olive oil - 1 avocado, diced (optional)  Instructions: 1. Rinse quinoa under cold water. 2. In a pot, combine quinoa and water. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes. 3. Fluff quinoa with a fork and let it cool. 4. In a large bowl, mix quinoa, black beans, bell pepper, and cilantro. 5. In a small bowl, whisk lime juice, cumin, salt, pepper, and olive oil. 6. Pour dressing over salad, toss gently.  7.
