I’d argue hard that back here on our green isle we make better cheese and better breads because we have a better climate. But I did swear to make my wife actually enjoy French onion soup. She hated it and I wanted to right the wrong. French onion soup is easy — it’s all down to using great caramelised onions. But the issue is they take time. You can burn them in a second so you’ve to stand over them for about 80 minutes to do them right. So here is 80 minutes per dish as a hack that takes 1 minute prep using the oven. Set on 120° and you’re good.
