Ingredients:
1 carrot (about 120gr)
1/2 courgette or zucchini (about 100gr)
2 spoons quark @grahamsthefamilydairy (you can replace with a low fat cream cheese)
2 eggs
Salt and pepper to taste

Method:
Grate the carrots and the courgette/zucchini making sure to squeeze as much water as possible.
Add in a bowl with all the other ingredients and mix well. 
Transfer the mixture on a rectangular tray with parchment paper and flatten it.
