Ziti 1 28 oz. can tomato puree 1 28 oz. can san marzano tomatoes ( hand crushed) 3 cloves garlic (chopped) 10 basil leaves 1 medium onion, (minced) 1 cup mozzarella 1/2 cup parmesan grated cheese 1/2 cup pecorino romano grated cheese 1/4 cup extra grated pecorino romano grated cheese for topping. 3 tablespoons EVOO 1 tsp Sea Salt or Kosher Salt RICOTTA MIXTURE: 2 cups whole milk ricotta 1/2 cup grated parmesan 1/2 cup pecorino romano cheese grated 1 cup mozzarella ( shredded) 1/4 cup fresh italian parsley (chopped) 3 cloves garlic (chopped) 1/2 teaspoon Sea salt or Kosher Salt 1 egg INSTRUCTIONS: 1. Bring a large sauce pan to medium heat, adding evo and salt. Saute onions,and garlic until soft, about 5 minutes. Then stir in ground sausage, breaking it apart and cook until it is browned. Once browned add pureed tomatoes and crushed tomatoes, basil and salt. Simmer for 5 minutes. 2. Preheat oven to 375 degrees. Combine ricotta ingredients in a large mixing bowl. 3. In a large pot of salted water, bring to a boil and cook ziti for about 6 minutes. Drain and return to pot, coat the pasta with a small amount of sauce. Coat the bottom of a large baking dish with sauce , then add half the amount of pasta to the dish, add 1 cup sauce and half the amount of ricotta mixture. Add 1/2 cup shredded mozzarella, then add the rest of the pasta, 1/2 cup mozzarella , to the top of the pasta and spoon another cup of sauce, add on the final layer a few dollops of ricotta on top., sprinkle pecorino romano grated cheese on top.Place the tray in a preheated oven for 25-30 minutes covered with aluminum foil for the first 20 minutes, then remove the foil for the last 5 minutes. Remove from the oven, garnish with fresh parsley or basil and serve warm. Ground pork 6 fresh garlic cloves 1 cup extra virgin olive oil 1 small onion (cut up) 1 teaspoon kosher salt 1 teaspoon pepper to taste 1 tablespoon garlic powder 1 tablespoon onion powder 1/2 cup parsley 28 oz Authentic San Marzano tomatoes (hand crushed) 28 oz puree 1/2 cup basil 6 oz tomato paste 2 cups Locatelli Pecorino Romano cheese 1/4 cup red wine (cabernet) 2 lbs. fresh ricotta 8 oz fresh mozzarella 2 large eggs 1/2 cup parsley Salt to taste 8 oz shredded mozzarella Directions: Ground beef and pork in a pot and mix together. Another layer of noodles top with meat sauce spread throughout, fresh mozzarella slices on top, more grated cheese and put in oven for 1 hour at 350 degrees.
