Ingredients: 1 lb ground beef 1 tbsp olive oil 1 large onion, chopped 2 bell peppers (red & green), diced 3 cloves garlic, minced 1 can (14 oz) diced tomatoes, drained 1 tsp paprika 1 tsp cumin 1/2 tsp salt 1/4 tsp black pepper 2 cups shredded cheddar cheese 1/2 cup mozzarella cheese 1/4 cup fresh parsley, chopped (for garnish) 4 cups cooked rice or pasta Instructions: Heat olive oil in a skillet over medium heat.
