This is fruity, sweet and involves the best pairing ever - lemons and bluebs. A quick and easy breakfast or snack, which tastes like dessert. Ingredients Serves 2 1/2 cup / 86g chia seeds 2 tbsp maple syrup/ honey 1/2 tsp lemon or vanilla extract 1.5 cup / 325ml milk 1/2 lemon - juice and zest 1.5 cup / 310g yoghurt 3/4 cup / 75g frozen blueberries Instructions 1. Combine your chia seeds, milk, maple syrup, extract, lemon zest + juice and 1 cup/ 230g yoghurt together. Leave to set for at least 2 hours, or overnight. 2. Put your frozen blueberries into a microwave for 1 minute, until they are fully defrosted and a sauce forms. You can do this on the stove if you would prefer. Place the blueberries into cups/ jars before adding the chia pudding on top. Finish with the rest of the yoghurt and a little bit of lemon zest.
