Crock Pot Chicken Tortilla Soup

When I originally published this Crock Pot Chicken Tortilla Soup Recipe, it was for a One Pot Chipotle Chicken Tortilla Soup, prepared on the stovetop,

Since that time, my evenings have gotten busier, and needed to adapt the recipe to work in my Crock Pot also.

It’s DELICIOUS either way you prepare it, but the Crock Pot Chicken Tortilla Soup Recipe works best for us in this season of life.

Usually, when I prepare a recipe different ways, I’ll post each way as a separate post.

However, my new Recipe Card tool has just started allowing users to bold sections, so I decided to give it a try and see how it works offering two methods in one recipe post.

If y’all prefer it this way, I’ll start sharing them this way.

If it doesn’t work out, no big deal.

I’ll just go back to creating two posts 🙂

Chipotle Chicken Tortilla Soup

Crock Pot Chicken Tortilla Soup Ingredients:

  • 3-4 Cups Shredded Chicken
  • 8 Cups Chicken Broth
  • 1 10 oz Can Diced Tomatoes w/green chilies
  • 1 15 oz Can Black Beans
  • 1-2 Chipotle Peppers in Adobe Sauce (1 for mild or 2 for spicy)
  • ½ teas. Chili Powder
  • 1 teas. Ground Cumin
  • ½ teas. Paprika
  • 3 cloves garlic chopped
  • 2-3 Tab. olive oil
  • 1-small onion
  • 5-6 green onions
  • 1/3 cup Cilantro
  • Shredded Monterey Jack Cheese
  • Avocado, Tomato, Lime
  • Sour Cream

Chipotle Chicken Tortilla Soup

Chop green onions, cilantro, chipotle peppers, garlic, and the regular onion into small pieces.

Next, in a large saucepan, heat olive oil over medium heat.

Stir in the above ingredients.

Add cumin, chili powder, and paprika.

Mix well and cook for about 5 minutes. 

Now, add the black beans (drained) and the can of diced tomatoes (drained).

Mix well.

Chipotle Chicken Tortilla Soup

Cook for a few minutes, then stir in the chicken broth.

Let simmer for about 30 minutes.

Next, stir in the cooked shredded chicken.

Squeeze ¼ of a lime into the pot.

Let simmer for another 15 minutes.

Add salt and pepper to taste.

Serve with fresh cilantro, diced tomatoes, green onions, limes, cheese, sour cream, tortilla chips, and avocados.

Crock Pot Instructions

  1. Chop green onions, cilantro, chipotle peppers, garlic, and the regular onion into small pieces, and add to crockpot.
  2. Add cumin, chili powder, and paprika.
  3. Add the black beans (without draining) and the can of diced tomatoes (without draining).
  4. Pour in chicken broth.
  5. Add in diced chicken, uncooked
  6. Add Lime Juice, Salt, and Pepper.
  7. Let cook on low 6-8 hours
  8. Serve with fresh cilantro, diced tomatoes, green onions, limes, cheese, sour cream, tortilla chips and avocados.
  9. Enjoy!

I love this twist on "plain" chicken soup! I also love the pictorial recipe directions. (I'm a visual person and they give me confidence!)

I love tortilla soup the first time I had it it was at a vitamix demo, then I tried buying it canned. No comparison. I want to try this, I miss delish tortilla soup and does this look like the best ever!
