    In spite of all the options that soup offers, there are many cooks that don't ever make their own. This may simply be because they're not used to making soup, or may think it takes too much time. However, making soup can be surprisingly simple. Even the most complex recipes aren't as challenging as they might initially seem.

    There are several common tools and ingredients needed to prepare many of soups found here. Oil is commonly used in soups, especially when the soup contains onions or garlic. While most of these recipes call for olive oil, this can be substituted for grapeseed or canola oil if needed.

    Any soup maker should also have a well-stocked spice cabinet. Bay leaf, basil, and peppercorn are found in many of these soup recipes, as is thyme, nutmeg, and coriander. In addition, most soup recipes call for both salt and pepper. Unless the recipe mentions otherwise, any kind of salt or pepper is fine. With that said, freshly-ground pepper tends to taste best in a soup.

    Many of the soups in this book call for some kind of stock. Recipes for preparing all the mentioned stocks are listed at the start of the book. However, store-bought stock can be used in place if there's not enough time to prepare freshly made stock.

    The most important piece of equipment any soup-maker can have is a large soup pot. Ideally, this should have a heavy bottom and should be made from stainless steel. If the bottom is thick, heat will be distributed more evenly throughout the pan.

    It's also important to have sharp knives and cutting boards on hand. Many soups require sliced or diced vegetables, which means people preparing the soup will be doing a lot of cutting. Dull knives can be dangerous in the kitchen, but sharp knives can help keep fingers safe.

    Because many vegetables also need to be peeled, it's a good idea to have a vegetable peeled as well. It's safer to peel with a peeler than a knife, and it's quicker and easier too.

    Many soups and broths need to be strained, which makes a large sieve a must. When making broth, a cheesecloth can also be useful, as it allows even small impurities to be strained out.

    Other important tools include wooden spoons, ladles, and whisks. When preparing pureed soups, a blender will also be required. Once a kitchen is equipped with these basic
