I love to eat, no let me rephrase that I really like to eat good food. I come from an Italian background which translates to large meals. Unfortunately we are all busy too busy to create the kind of epic meals. Everyone likes to have a great meal but some people feel they don’t have time to cook or they don’t have the skills to prepare a decent meal. With some advanced planning, pre-preparation and a few ingredients anyone can have quick and easy meals daily. When planning meals consider shortcuts for example use seasoned food like breadcrumbs or spice blends, accompany your basic meals with a salad. In Mirella Cooks Three Ingredient Recipes I have compiled more than 150 of my favourite recipes with just a few ingredients, many with variations. Some of the recipes you will see will have Italian names because they are Italian recipes from my childhood; some are shortcuts without compromising taste. Mirella L. Sacco
Mirella Lucia Sacco was born and resides in Edmonton Alberta Canada in 1966. She was born with Spina Bifida. Mirella is a first generation Canadian; her parents Fortunato and Domenica Sacco were from the Italian Region of Calabria. Throughout her career she has held various positions that include the transportation industry, Government positions working with politicians to starting and running a non-profit agency to support individuals with disabilities. It has been Mirella’s dream, calling and she feels her obligation to share information and teach others.

ANTIPASTI
All items that are listed below can be purchased at your local Italian deli or most major grocery store chains.
Antipasti are served in Italian homes or gatherings to guests in the form of a platter, as a first course or as a late-night snack. Served arranged on a tray with sliced bread or buns in order to make sandwiches or what are called panini/panino. Traditionally Italian families make jarred vegetables either in an olive oil or vinegar base or both depending on the food being jarred. Basically, anything that is pickled can be served on antipasti platter, with a variety of cheeses and/or cold meats and this is what is called antipasti.
BACON WRAPPED WATER CHESTNUTS-400°F/30 Mins
1-8 oz. can water chestnuts, drained
8 slices bacon, slice in half crosswise
Wrap each chestnut with a piece of bacon. Secure with a toothpick. Arrange in a shallow baking pan. Bake until golden brown. Drain on paper towels.
