ACKNOWLEDGEMENTS
As a young child, I spent a lot of my time tied to my grandmother’s apron strings. She had the ability to create something delicious from very little, coming like a blessing, sometimes, on a cold winters day on our arrival home from school. Invariably, she would enquire as to what lessons we had learned at school. Lessons from school had their necessary place in our early learning, but when the school of life ensued, there was a lot more to be learned on the way. Her compassionate nature kept all of us in a warm place, the hearth, while my parents were busy rearing seven youngsters. She was a role model who taught me many virtues such as humility, compassion, generosity and simplicity. Her memory lives on especially in my kitchen when I’m preparing food for my family and friends.
To the two people who created me, my late father, and my mother, now in her ninetieth year, great gratitude goes to them both. My father never let us forget our lineage, expecting only the best from all of us, and, my mother, who had to cope with many turns on the road of her life, and is here to reflect what a strong constitution can handle. My family of origin, my three sisters, and three brothers, always there to watch over their youngest sibling, keeping me out of danger. A special word of thanks goes to my sister Mary, whom, when I was in need, placed me under her wing, and supported me, mentally, emotionally and financially. Laurence, Philip, Michael, Anne, Carmel and Mary, I love you all dearly.
Beyond family, there have been so many people who have made an enormous difference in my life, being some of my greatest teachers. To John Keogh, who engendered a love of great literature, nature and spirituality. To the late Eileen Lally, who appeared, like an earth angel, at a critical time in my life, giving me a room at the inn, so to speak, and sadly leaving us long before her time, but leaving the memory indellably, of her beautiful smile. You will never be forgotten. Brigid Lynch, Eileens sister, and her husband, Gerry, stepped into the fray, becoming two of my best friends. Nursing fraternity hold a common bond throughout their working life, and beyond, many of whom I remember with great fondness, but, too many to mention. One, however, whom I met many years ago, at a walking
