FOREWORD
Is It Sous or Sauce?
Image%2001.jpgThe love of cooking comes from being there at 4 am when Dad would be putting bread in the oven, and the smell of the bread baking and the potatoes frying, the bacon and eggs, and in the middle of it all was Dad, and Mom weaving as you will a dance as they cooked breakfast for 80 hungry campers.
The memories of those times I know are what started me on my journey for the love of cooking.
Is it Sous or Sauce? I used to think that the title was what the person did, so the Sous chef was a sauce chef, but the word Sous (pronounced soo) is French and means under. So a Sous chef is the second in command. The word Sou or Sous for plural also means a small amount of money which is what sous chefs usually make.
The culinary experience is so vast and varied, that in order to truly experience it in all its flavors is to live it in all its flavors. I have found that to prepare food in its many different ways brings a sense of satisfaction and fulfillment. The love of this cooking comes as I watch my friends and family eat and the pleasure they derive from eating good food.
I am writing this book not because I think that I have great things to offer the culinary field, but because throughout my 40 years of cooking, and yes I am a cook not a chef, though I have had the honor of being called chef, the truth is I am just a simple cook that loves good food. I am more writing this book because I wish to share with my family and friends the love of cooking.
ACKNOWLEDGEMENTS
I first and foremost want to thank my Lord Jesus for the love and life He has given me, it is by His good graces that I sit and write of my love of cooking, and it is by His divine spirit that I enjoy life in its entire splendor.
