Greek Salad
Ingredients:
2 large tomatoes, diced
1 cucumber, diced
1 red onion, thinly sliced
1 green bell pepper, diced
200g feta cheese, crumbled
Kalamata olives
Olive oil
Red wine vinegar
Oregano
Salt and pepper
Preparation:
Combine all ingredients in a bowl, drizzle with olive oil, and vinegar, and sprinkle with oregano.
Toss and serve.
Hummus
Ingredients:
1 can chickpeas, drained
2 cloves garlic
2 tbsp tahini
2 tbsp lemon juice
2 tbsp olive oil
Salt to taste
½ tsp Paprika powder
1- 2 tbsp olive oil for garnish
Preparation:
Blend chickpeas, garlic, tahini, lemon juice, olive oil, and salt until smooth.
Garnish with paprika and olive oil.
Tzatziki
Ingredients:
1 cup Greek yogurt
1 cucumber, grated and drained
2 cloves garlic, minced
1 tbsp olive oil
1 tbsp fresh dill, chopped
Salt
Pepper to taste
Preparation:
Combine the above ingredients and mix it well in a bowl
Chill before serving.
Spanakopita
Ingredients:
1 package frozen spinach, thawed and drained
1 cup feta cheese, crumbled
1/2 cup ricotta cheese
1/2 cup chopped onions
1/4 cup chopped dill
Phyllo dough sheets
Butter for brushing
Preparation:
Mix the spinach, feta, ricotta, onions, and dill.
Layer the phyllo sheets: Lay one sheet of phyllo dough in a baking dish, brush it with melted butter, and then add another sheet. Repeat this process until you have about 6 to 8 layers of phyllo.
Spread the spinach mixture evenly over the layered phyllo sheets.
Continue layering phyllo sheets on top of the spinach mixture, brushing each sheet with melted butter.
