Muscle source influenced (p<0.05) surface redness (a* values; Figure 1) and color stability (R630/580; Figure 2) of LL and PM steaks, whereas it did not impact (p>0.05) lightness (L* value; Table 1) and
yellowness (b* value; Table 1).

Pirmohamammadi et al., (2016) found out that mentha and thyme powder did not change the redness and
yellowness of broiler meat under heat stress.
The coating achieved a
yellowness index of less than 4.0 and AE rating of less than 3.1.

yellowness), based on the CIELab system.
From my experience, we need more research to understand at what price customers will forgo the benefits of a Kienyeji egg (
yellowness and taste) and opt for exotic one because it is cheaper.
Y reflectance and
yellowness index were measured, not L* and b*.
The reading of the measurement results was achieved in a CIE LAB colorimetric system CIE LAB [16], with [L.sup.*] (lightness), [a.sup.*] (redness), and [b.sup.*] (
yellowness).
