Made dip out of the sudachi citrus I got a while back. They're supposed to be eaten green but the store only had them yellow, unfortunately, so I didn't get to experience the sourness they are famed for. They still tasted good and like their own thing, but they weren't very sour any more.
Recipe:
2 Sudachi Citrus Zest
~4 Sudachi Citrus juice
1/4 cup mayo
Pepper
Salt
Thoughts: It had an orange-y flavor to it, and I ate it with artichokes which went really well with it. I enjoyed it, but I wish I got to try them the way they were meant to be.
From Chris: For those that have no access to sudachi fruits - lemons, limes and yuzus are a good substitute. (And with yuzu, just find an orange, mix with either a lemon or grapefruit [or both] and you're good to go.)
It is also worth noting that the dip itself has more uses than something for your chips. This would be a great sauce for eggs benedict, or for crab cakes, or as a marinade for grilling with chicken / fish!
