Zed and Jay were quite plainly looking for someone who met the physical training requirements an MIB agent needs but they were also looking for someone more intuitive. First, Williams asks why he and the other candidates are at the evaluation meeting; he doesn't get a straight answer out of Zed and is still puzzled as to why everyone's there even after Jenkins semi-scolds him. When the written test is handed out, Williams is the only person in the room to drag the table over to his chair, despite the loud and potentially embarrassing screeching noise it makes. And during the target exercise, Williams is the only candidate who notices that Tiffany is a real danger. What MIB wants is an agent who can assess situations and work outside any predetermined standards for conduct. As Kay says to Zed, he too has a problem with authority. Likely a way of saying "you and I work well together, even though I have a problem with authority. So Jay will be no different."

Because they were likely tracking Mikey or received a tip that an alien was trying to sneak across the border. When Kay is speaking to each of the Mexicans, he speaks to them in Spanish. Each of them reacts or responds accordingly. When Kay gets to Mikey, he starts insulting him in Spanish. Mikey's "head" starts nodding and laughing, clearly not understanding what he was saying. This is what tipped Kay off.
Men in Black is taken from a script by Ed Solomon, who based the screenplay on a Marvel comic book series called The Men in Black by American writer Lowell Cunningham. There are three sequels: Men in Black II (2002), Men in Black³ (2012) and Men in Black: International (2019).
It wasn't completely dead. He just blew it in half, but the half with the head was still alive. Not too uncommon with bugs. Many types of bugs can live for minutes or hours even after being so injured. Also, Edgar, being an interstellar roach, may have some ability to regenerate himself later.
The UK version features a slightly censored audio track. The word "prick" was replaced twice. Unfortunately this audio track was used for several European home cinema releases.
