These sound like flip answers, but if your team is at risk of burnout (which is the result of chronic overwhelm, not a one-time special-project-push) it's a systemic problem that should be addressed as such. WHY are they being given more tasks than they can sustainably accomplish? WHY is the deadline being set without team health being one of the influencing factors? It's possible – likely, even! – that someone is putting the profitability of the company above the wellbeing of its employees. There is no amount of mini-deadlines, task breakdowns, and free-pizza-cowork sessions that can overcome a fundamental mismatch of organizational priorities.

The power of celebration cannot be overstated. Acknowledging the small wins is paramount towards helping a team feel successful. This can feel counterintuitive or silly to some, but it is the key to transforming a team's dynamic for the better amidst stressful situations (like a deadline).
