The caramel shown was brought to 247 degrees. 🌡️⁣ ⁣ **𝗥𝗲𝗰𝗶𝗽𝗲⁣** **𝘐𝘯𝘨𝘳𝘦𝘥𝘪𝘦𝘯𝘵𝘴:** 1 cup sugar⁣ 2 tsp corn syrup⁣ (optional)⁣ 1/4 cup water⁣ 1/2 cup cream⁣ 1 tbsp butter ⁣ 1 tsp sea salt (to taste)⁣ 1 tsp vanilla (to taste)⁣ ⁣ **𝗗𝗶𝗿𝗲𝗰𝘁𝗶𝗼𝗻𝘀:** Add granulated sugar, water, and corn syrup to a large pot. Stir and use a pastry brush dipped in cold water to wipe the sugar off the sides. This helps prevent crystallization. I do this a few times during the cooking process until the cream is added.⁣ Boil on medium heat until a golden amber. Once it starts to turn color, it can burn quickly. Do not walk away from it at this point. Use your eyes as a guide. Under caramelized, and the flavor will be lacking. Cook it too long, and it will be bitter. ⁣ Slowly add heated cream since cold cream will turn it into a lumpy mess. Unfortunately, I learned this the hard way 😱. It will steam and boil up, so be careful. You can skip further boiling if you want a runny sauce for ice cream. Boil until 247 degrees and remove from heat. ⁣ Add sea salt, vanilla (whiskey is amazing as well), and unsalted butter. Whisk and then jar while warm.⁣ ⁣ **𝙋𝙧𝙤 𝙏𝙞𝙥:** Since I need to warm the caramel to squeeze it from the piping bags, the corn syrup helps stop the sugar from crystallizing. The constant rewarming would eventually cause the caramel to turn grainy. ⁣ Yes, you can make it without the corn syrup.
