She just kept on sending me video after video until I had to recreate it myself! It’s just celery with a ton of fresh herbs, crunchy nuts and seeds (any can work) and a little hint of sweetness in every bite with some dried blueberries (they used craisins - but OMG the berries are next level) The real winner though is that full blown LEMON dressing. You must have a lot of fresh lemon juice - I took the 2 biggest lemons I could find - it’s key, combined with that touch of honey. The best salad my family could not get enough of it and it’s on repeat here in my house -

Mediterranean Plan Weightloss on Instagram: "This red kidney bean salad with stir-fried veggies is going to be your new favourite salad🔥 Ingredients: 1 medium red onion 1 large beetroot 1 medium carrot 2 pickled cucumbers 200 g cooked red kidney beans 2 garlic cloves (minced) 1 tsp coriander powder 3 tbsp vegetable oil (for cooking) 6 tbsp chopped coriander 3 tbsp chopped parsley 1/2 tsp salt For the dressing: 4 tbsp olive oil 1 tbsp apple cider vinegar Pinch of salt Pinch of black pepper Method: 1. I ate it as cucumber rolls and these were amazing. . Here is how to make it: 1. Start with 1lb of cooked, shredded chicken (I just shredded 4 cooked chicken breasts, but rotisserie works too). Shred with two forks or thinly dice it up. 2. Finely dice 1/2 a red onion and soak it in 2 cups of water for 10 minutes to mellow the flavor, then drain and add to a bowl. 3. Chop a handful of fresh cilantro, cube 1 avocado, and toss both into the bowl. 4. For the dressing, blend together: 5 tbsp cottage cheese, 3 tbsp mayo, 1 tbsp onion powder, juice of 3 limes, a handful of cilantro, a generous couple pinches
