In a bowl, combine 4 cups all purpose flour, 2 tsp yeast, 1 tsp salt and 1/2 tsp sugar. Add in 2 cups warm water and 1 tbsp olive oil. 3. Mix that all together with a spatula until there’s no dry flour left. Cover and allow to rise for 30 minutes. 4. After 30 minutes, using wet hands, pull one corner of the dough up, and fold it over itself. Turn the dough 45 degrees and repeat. So that 8 times to build some structure in the dough. (Perform stretch and folds). Cover once more and allow to rise for 1 hour in a warm place. 5. Heavily flour a flat surface and dump your risen dough onto that surface (it should fall right out of the bowl). 6. Flour the top of the dough as well, be careful not to move it too much, but lightly pull the sides of the dough in to make a rectangle. 7. Make sure the entire top of the dough is floured, then use a knife or a bench scrapper to cut the dough into 6 equal pieces. 7. Transfer those pieces directly onto a floured, parchment lined baking sheet (no shaping needed). 8. Bake at 440℉ for about 30 minutes or until golden. Allow to cool fully and enjoy! We're going to make this a pecan bread. Pecan bread. What is the other name for it? I believe Alabama calls it sweet pecan bread. Georgia might call it Georgia cornbread. I'm not real sure. So everyone has their own name but can I see it's called Pecan Bread? Yeah I'm just going to call it pecan bread. Mhm. But I'm going to take a cup of vegetable oil. Mhm. To my sugars. And four eggs that I've already got beaten up here. I'm going to mix this all together. That's a nice spoon too. Yes I got this for Christmas at on one of those Santa gifts. Mm. One and a half cups of self-rising flour. Okay. So there's our one. Mhm. Here's our half. Okay we're going to mix that in. It takes just a minute just to get it combined. We're not sloshing it all over the kitchen. Mhm. Anything I can do right now or are you good? Yeah I'm good but you see I just slashed it everywhere. Hey it happens to the best of us. That looks really nice and mixed. Okay now you're going to take a teaspoon of vanilla flavoring. And we're using our top trick. Yeah some people say that ain't right. But that looks right to me. And two cups of finely beaten nuts. We love those finely beaten nuts. Yes. Here we go with those. This should be real good with maybe with a cup of coffee. Yeah. Get cold again here in Tennessee. That's going to be good. And then you're just going to pour it into a greased nine by 13dish. We have this one nice and greased. This is a nine by thirteen if it noone knows. This is what it looks like. Yes and we are going to cook it at 350 for about 30 minutes. Is this supposed to be a cake or a cornbread? It well it's called pecan bread. It looks nice. Yeah. I think much we like our pecans so. Look at that. That looks tasty. Some some people caught pecan sweet bread, Georgia cornbread. I don't know how they caught cornbread though. There's not a ton of sugar in it though, right? Well, it's got a cup of brown and a cup of white. Is that a lot? I don't know because I've seen some recipes that have three or four. Well, that's well that's true. No, I don't think it's that bad though. I mean, it ain't that good either if you're a diabetic or on a diet. Well, I'm glad noone in our family is diabetic. Really? Okay. Now, we're just going to pop her in the oven. 350 for Halloween. 30 minutes. 30 minutes? Mhm. That looks good. It does look really good. Alright let's see it Kimberly. Wow. We made them with a yeast dough that had to rise overnight in the refrigerator. I mean, who has time for that? So, I thought, it's gotta be a better way. So, I thought puff pastry, maybe I can make them with puff pastry. Oh my god. They're so good and they take like 10 minutes to prepare. First, I need 12 tablespoons of unsalted butter. That's one and a half sticks. A third of a cup of brown sugar. I use light brown sugar. It's really important that the butter be room temperature so you can mix it. Just mix those together. Okay, that's that. These are all made in muffin pans. So, I'm just going to put like a tablespoon in the bottom of each cup. These are actually done upside down. So, I'm putting the brown sugar and pecans and butter in the bottom and then the pastry in the top and then when they're done, I'm going to dump them out and let me right side up. So that's the butter and sugar and now I'm going to put some pecans on the top of each one okay that's the topping now for the puff pastry when I thought of making this with puff pastry I was hoping it was going to be as good as the original and what I found out is it's even better you buy frozen puff pastry in the grocery store or especially food store what I do is I defrost it overnight in the refrigerator you want to keep it really cold it's important that the butter stay really cold in the sheets of puff pastry so put this on a board little bit of flour so it doesn't stick no point in it if it sticks to the board or the counter. So, I'm just going to unfold this Perfect. Little bit of melted butter. Brush on the pastry. The key to this is really keeping it very cold because when the heat of the oven hits the butter in the pastry, it causes steam to rise and that's actually what makes it light and flaky. Okay. Need a third of a cup of brown sugar. Sort of pack it lightly. And I'm going to leave a little border like an inch and a half around the outside and then just distribute the brown sugar around so it's even okay so that's the brown sugar and 1 1/ 2 teaspoons of cinnamon so just distribute it evenly again leaving it one and 1/ 2 inch border and then next part is raisins half a cup of raisins That should be about a half a cup. Now, I'm going to just roll it up. You want to roll it up pretty tightly but not press on it. You want to just roll it up snugly and that's why the flour is important because you just want it sticking to the board and this is the reason you leave the edge so the butter will make this puff pastry stick at the edge. I'm going to cut off the ends just so that you don't have a ragged edge. I'm going to cut it in half and then cut each half in thirds Okay and then these are just going to go right into these pans with the brown sugar and butter and pecans. Just press them lightly. Okay, into the oven, 400 degrees for about 30 minutes until the pastry is firm to the touch and the butter and brown sugar and pecans are caramelized.

Most shop bought pastries and breads contain highly processed ingredients, so I’m on a mission to replicate them with this super quick and easy dough. Follow along for more and let me know in the comments if there’s something you want me to try. 🫶 Cheese Straws Makes 32-36 Dough: 240g Greek Yogurt * 1/2 tsp salt 300g plain flour * 1 tsp baking powder Filling: 120g Chedder 100g Parmesan Salt and pepper 1 x egg yolk 1 x tsp milk Sesame seeds *if you use a more watery yogurt it may be more sticky so just work some more flour into the dough from your surface while kneading* Mix the salt into the yogurt and then add the flour and baking powder. Mix with the spoon and your hand until the dough is shaggy (it might seem dry but it’s fine) place on your work surface and knead for 2-3 minutes till smooth, if it’s sticky you can flour to the surface. Cover with a tea towel and rest for 15-30 minutes. Preheat your oven to 200C Flour your surface and the top and bottom of the dough and shape it into a rectangle as much as you can and roll it out, lengthways and sideways to create a thin rectangle, sprinkle the chedder onto the bottom half and fold the dough over. Turn the dough 90° and roll it out again to thin rectangle. Add the Parmesan to the middle and fold over each side turn 90° and do the final roll into another thin rectangle. Using a pizza cutter or sharp knife slice down the middle of the dough then cut into 1 inch strips.
