What you’ll need for the pasta:
2 slices crusty bread, torn into small pieces
2 tablespoons olive oil
½ teaspoon paprika
handful of thyme leaves, (about 30g)
1 butternut squash (about 650g) peeled, deseeded & cut into small 1cm cubes
2 onions, halved & finely sliced
1 bulb garlic
2 tablespoons olive oil (+ extra to garnish)
1 pack silken tofu (about 300g) drained
75ml oat milk
1 lemon, zested & juiced
1 tablespoon smooth Dijon mustard
2 tablespoons nutritional yeast
1 teaspoon tamari
pinch of ground turmeric
pinches of flaky sea salt & black pepper
4 servings of pasta (about 300g)
 1. Preheat the oven to 200°C fan / 425°F. Toss the torn bread with oil, paprika, thyme leaves and a large pinch of flaky salt. Place on a baking tray. 2. Place the squash and onions on another baking tray. Drizzle with oil and season with flaky sea salt and black pepper; toss so that everything is combined. Slice the top off the garlic bulb so that the cloves are just exposed; place the bulb on a sheet of baking parchment or foil and drizzle with a little oil. Scrunch the parchment/foil around the garlic. Place on the baking tray with the squash and onions. Put both baking trays in the oven. Bake the bread for 10–15 minutes until golden, then remove from the oven and continue to cook the squash for another 15–20 minutes until golden and soft. 3. Meanwhile, cook the pasta according to the packet instructions, reserving a mug of the pasta water. 4. Once the squash is cooked, put ½ of the squash mixture in a blender with the tofu, oat milk, lemon juice and zest, mustard, nutritional yeast, tamari, turmeric, a pinch of paprika and then squeeze the roasted garlic out of its skin into the machine. Blitz until smooth and season to taste. 5. Tip the sauce into a pan with the pasta, adding a splash of pasta water to loosen, if needed. Stir through the remainder of the roasted squash mixture and serve with the crispy breadcrumbs. | Deliciously Ella

Small or Medium Shrimp, peeled and deveined▪️4 Eggs▪️Kosher Salt & Pepper▪️1 Medium Carrot, peeled and diced small▪️2 Cups Napa Cabbage, sliced in thin 1” strips▪️2 Garlic Cloves, finely chopped▪️4 Cups Cooked Jasmine Rice (day old rice is best!)▪️2 Tbsp Sesame Seeds▪️1 Tbsp Soy Sauce▪️4 Tbsp Butter, divided▪️1 Tablespoon Sesame Oil▪️3 Scallions, chopped▪️ 1️⃣ Season both sides of the shrimp with salt and pepper. 2️⃣ In a small bowl, whisk the eggs with salt and pepper. 3️⃣ In a wok or large pan over medium-high heat, add 2 tsp avocado oil and the shrimp. Spread the shrimp into one layer and cook for about 2 mins per side until pink and golden brown around the edges. Remove from the wok. 4️⃣ Add 2 tsp more oil and the eggs. Cook, tossing once or twice, until there are more crispy bits, about 2 minutes. 7️⃣ Add the scrambled eggs and mix, breaking up into smaller pieces with a spatula. It’s also a great base to add gnocchi or pasta too if you’d prefer! Ingredients: 1.) 1 large leek (trimmed) 2.) 1 Boursin (I used the lemon and rosemary) 3.) cream 4.) cheddar 5.) walnuts Method: Trim the ends of your leek and then give the leek a quick rinse before slicing into thin rounds. In a pan add your Boursin followed by your cream (I used around 200ml) and stir until the Boursin is melted down in the warm cream then add in your cheddar. Add in your leeks and cook for about 5 minutes on a medium heat before adding your walnuts. Season with pepper and stir to combine.
