Recipe details ⬇️ INGREDIENTS 1 tbsp oil (any variety) 1 medium yellow onion chopped 2 large garlic cloves finely chopped 1 jalapeño finely chopped without seeds if desired 1 tsp chili powder 1/2 tsp cumin 1 lb ground beef or Turkey 1 (14oz) can black beans drained 2 cups plain tomato sauce 2 (12 oz) bags fresh or refrigerated gnocchi (1 1/2 lb) 1 cup grated cheddar cheese 1/3 cup chopped cilantro or basil 2 cups cherry tomatoes sliced in half INSTRUCTIONS 1. In large skillet add oil and chopped onion. Sauté for 5 minutes, just until tender. 2. Add chopped garlic, jalapeños, cumin and chili powder and cook another 2 minutes. 3.

Recipe ⬇️ INGREDIENTS 2 large parsnips peeled or 4 medium ¼ cup olive oil salt and pepper 3 tbsp grated parmesan cheese INSTRUCTIONS 1. Preheat oven to 450 F. 2. Boil parsnip halves covered for about 8 minutes or just until fork tender. Drain and rinse with cold water. Slice lengthwise in half again. 3. Brush half olive oil on parchment paper then sprinkle with salt. Place parsnips over top brush with remaining olive oil and salt again. 4. It’s not traditional but it is ready quickly and that’s definitely a win!
