INGREDIENTS:
2 mashed or grated plantains (very ripe!)
Enough P.A.N. yellow precooked cornmeal to make a soft dough
2 pinches of salt
2 cups queso fresco
1 cup parmesan cheese
Enough vegetable oil to deep fry and a little to brush

INSTRUCTIONS:
Mix the mashed plantain with enough cornmeal, adding it a bit at a time until you get a soft dough. Add a pinch of salt and mix well. Combine the cheeses and add the other pinch of salt. Make balls of 3 tbsp of dough, then flatten over moist plastic wrap over a cutting board, add 1 1/2 tbsp of cheeses, fold and seal gently and cut edges with a biscuit or large cookie cutter.
