How To:

Coat mozzarella pearls in FLOUR then EGGS then BREAD CRUMBS. Place on a plate and pop in the freezer for 5 minutes.

Place in air fryer and spray with non stick cooking spray.

Air fry at 400° for 5 minutes a shake basket to toss half way through.

Sprinkle with parsley and serve with marinara sauce.

Ingredients:

-10 oz cheddar, grated
-1 cup milk
-2-3 lemons, juiced (approx 85 ml)
-1 1/2 tsp baking soda
-350g elbow macaroni
-1/3 tsp mustard powder
-kosher salt to taste

Method:

Cook macaroni according to package directions.

Combine lemon juice and baking soda and allow it to fizz. It will expand so use a container with some height. Once it’s settled add to a pot with milk and bring to a light simmer. Stir in cheese and turn heat off. Blend on high until smooth and season with mustard powder and salt, to taste.

Toss with noodles and serve right away.

This is one of my viral reels that I always get messages about. I used to roast root vegetable peelings years ago in the oven, and I tried them recently in the Airfryer and they are so quick and delicious!!

I just used potato in this video but you can use sweet potato, carrot, parsnip etc.

A great way to prevent any food waste and a really tasty snack! I usually always cook my potatoes skin on but for mash etc this is a great way to still get the nutrients.

The skins are jam packed with fibre and gut loving nutrients so don’t throw them away!!!

To make:

Wash and dry the potatoes (I use organic) and peel the skins.

Ingredients ~
1/2 cup plain Greek yogurt
2 chipotle peppers in adobo sauce
2 tablespoons olive oil
2 tablespoons mayonnaise
Juice of 1 lemon
3 garlic cloves, chopped
1 tablespoon Dijon mustard
2 teaspoons honey
1 teaspoon salt
1 teaspoon pepper
Pinch of parsley or cilantro
Method ~
In a food processor or blender, combine all the ingredients, until the mixture is smooth and creamy.

Taste the dressing and adjust the flavor if needed; add more salt for seasoning or honey to balance the acidity.

Pour the dressing into a jar and store it in the fridge for up to a week (if it lasts that long!).
