Veggie Christmas Cake
Ingredients:
1 pound margarine 1 pound brown sugar 1 cup Red Wine (optional) 2 tablespoons lime juice 2 tablespoons vanilla extract 2 tablespoons almond extract 1 grated zest of one lime 5 pounds ground dried mixed fruit 4 cups Red Wine 1 cup dark molasses (could add cup more if darker colour is desired) 1 cup Cake Colouring (could add cup more if darker colour is desired) 1 kg packet self-rising flour 1 teaspoon ground nutmeg teaspoon ground clove 1 teaspoon ground cinnamon
Directions: 1. Soak 5 pounds ground dried mixed fruit with 4 cups wine for at least 6 weeks in advance. 2. Line 4 9 inch round cake pans with grease proof paper and thoroughly grease the paper on the side that will connect with the mixture. 3. In a large bowl, cream together the butter and sugar until light and fluffy, then add wine, lime juice, vanilla, almond extract, and lime zest. Stir in mixed fruit (soaked in wine), molasses and cake colouring. Sift together flour, baking powder, nutmeg, allspice, cinnamon, and salt. Fold into batter, being careful not to over mix. Pour into prepared pans. 4. Preheat oven to 350 degrees F (175 degrees C) for 15 minutes before putting mixture into oven. Bake in preheated oven for 80 to 90 minutes, or until a tooth-pick inserted into the centre come out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
