Kiddie Kreations

Recipe Ideas
Turkey Sandwich Wrap
• One large flour tortilla
• One tablespoon of mayonnaise
• One tablespoon of graded parmesan cheese
• Two ounces of deli turkey
• 1 tablespoon of chopped red onion
• ¼ cup of baby spinach leaves
• 1 oz of sliced provolone, swiss, or cheddar cheese
• 2 thin slices of tomatoes

In a small bowl stir together mayonnaise and parmesan cheese. Spread over
tortilla to within ½ inch from the edges top with remaining ingredients. Roll up
tortilla to enclose filling, then cut in half crosswise

This is a great sandwich to pack in a child’s bucket for school. This contains
grains, dairy, protein, and vegetables.
Veggie Bagels
• One tablespoon brown mustard
• One bagel sliced in half
• One leaf romaine lettuce
• 4 slices of cucumber
• 2 (1/4 inch thick) rings of green bell peppers
• 2 slices of tomato
• 2 slices of red onion
• ½ cup of alfalfa sprouts
• Spread mustard on one half of the sliced bagel. Layer it with lettuce, green
pepper, cucumbers, and tomato. Top with onion and alfalfa sprouts. Repeat
on other half of bagel.

• Great source of grains and vegetables.


Blueberry Pancakes
• 1 ¾ cups of flour
• 2 tablespoons of sugar
• 1 teaspoon baking soda
• ½ teaspoon salt
• ¼ teaspoon ground nutmeg
• 2 large eggs
• 1 cup of milk
• 1 cup of sour cream
• ¼ cup melted butter or vegetable oil, plus extra oil for the pan
• ½ teaspoon vanilla extract
• ½ teaspoon finely grated lemon zest
• 1 ½ cups of fresh blueberries, rinsed
Place a sifter or sieve in a large mixing bowl and measure the flour, sugar, baking powder, baking soda, salt, and nutmeg
into it. Sift the ingredients into the bowl
In a separate large bowl, lightly whisk the eggs. Add the milk, sour cream, melted butter (or oil), and vanilla extract and
whisk to blend
Make a well in the dry ingredients and pour the liquid mixture into it. Vigorously whisk the ingredients just until
blended. Add the lemon zest and the blueberries then gently fold them into the batter with a rubber spatula. Heat a
large heavy skillet over medium heat for 3 to 4 minutes, then pour in enough cooking oil to coat the surface. For each
pancake ladle about ¼ cup batter onto the hot skillet. Cook pancakes.

This is a good way for children to get their grains, fruits, and dairy
Banana Smoothies
• One frozen banana
• ½ cup of non fat yogurt
• ½ cup of fresh orange juice
• ¼ cup of blueberries
• Combine all ingredients in blender until smooth

This is a great and fun way for kids to get their


dairy and protein
Mac and Cheese Cups
• 3 cups of skim milk
• 2 ½ tablespoons flour
• 1 ½ cups of reduced fat cheddar cheese, shredded
• ¾ cups part-skim mozzarella cheese, shredded
• ½ cup parmesan cheese, grated
• 8 ounces elbow macaroni, cooked and drained.
• Preheat oven to 350*F. In a medium saucepan, slowly add one cup of milk to flour, stirring
constantly until all lumps have dissolved. Add the remaining milk, stirring thoroughly. Place on
stove and simmer for 15 minutes, stirring occasionally until sauce thickens. Add one cup cheddar,
¾ cup mozzarella, and ½ cup parmesan cheese; stir until blended. Add macaroni, stirring gently to
coat well. Line muffin tin with paper muffin cups and place one scoop of macaroni mixture into
muffin cup. Top with reserved ½ cup cheddar. Bake15 minutes or until golden brown. Let cool
for 5 minutes before serving.
