Use this Batter to make any kind of dosas,uttapam I presoak the rice and Urad dal(white lentil) separately and then grind them. Mix it well , add some salt and leave it for fermentation. This fermented batter is then used to make Idlis, Dosa and Uttapam. Since I did not have any batter to make this , I googled for an instant recipe and came across the LOVE4COOKING blog and followed the Instant Onion Uttapam recipe. Its a very easy recipe and the Uttapams/Pancakes came out great. My kids loved them and did not have much left to take some decent clicks. Now I would call it an almost instant recipe as we still have to keep the mixture aside for half an hour. But that half an hour goes quick..believe me. Also that time could be utilized for chopping the veggies (onion,tomato, green cilanto leaves, green chillies). If you still have some time left you could enjoy a cup of tea and watch your favorite show. Ingredients : Instant Uttapam Mix 1 1/2 cup Semolina /Sooji/Rava 1/2 cup rice flour 1 cup yoghurt 1 cup water salt to taste
Preparation : Take 1 cup of yoghurt and mix about 1 cup water. Whisk it well. Make it like buttermilk consistency. Now to this add semolina and rice flour. Mix it well. Cover and keep it aside for half an hour for fermenting. Now chop the veggies (1 red onion, 1 tomato, 2-3 green chillies and a handful cilantro leaves). After its been resting for 1/2 hour, the Uttapam mixture will be a bit dense as the semolina absorbs most of the water. Add about 1/2 cup to 1 cup water , mix it well. Add salt and the chopped veggies. Heat a griddle/Tawa. When its hot, pour about 1/4 cup batter onto the griddle and spread in a circular motion. Apply some oil around the Uttapam. Once its cooked turn it and let it cook on the other side. ngredients:

PREPARATION:

2. Grind them along with flattened rice, cooked rice, salt into a dosai batter consistency. 3. Keep the batter in warm place for 12 hours to ferment. Usually this is done overnight. 4. Heat the iron griddle or non-stick tawa well. 5. Pour a spoonful of batter in the center, spread with the back of the spoon to a thin round. 6. Garnish with all the shallot, tomatoes, green chili as needed on top. When done
thappa deserves to be called the indian pizza as it lends itself to several toppings, the most popular being crisp cooked onions. You may also try other combinations such as onion and tomatoes. Usually vendors spread the topping over the uthappam batter and press it in well with their wet fingers. But, to avoid hurting your fingers, use a spatula if youre a novice!

Combine the dosa batter with little water and salt in a bowl and mix well. Heat a non-stick tava (griddle), sprinkle a little water on it (it should sizzle immediately) and wipe off using a piece of cloth.

Pour cup of the batter on the tava (griddle), spread in a circular motion to make a 150 mm. (6") thick uttapa and cook on a medium flame for a minute.

Add 1 tsp of butter in the centre, smear evenly and cook for 2 minutes. Sprinkle 2 tbsp onions, 1 tsp coriander, tsp of green chillies and tsp of garam masala
Turn over and cook on the other side till it turns light brown in colour. Repeat with the remaining ingredients to make 3 more uttapas. Serve immediately with sambhar, coconut chutney and green garlic chutney.

Ingredients for Omelette: 1. 2. 3. 4. 5. 3-4 Eggs cup Green, yellow, red capsicums (diced) 2 Mushrooms (diced) 1 Onion (diced) 1 Tomato (diced) 2 tbsp Butter 1 tbsp Milk 2 tbsp Grated Cheese tsp Pepper Powder 1 tsp Italian mixed herbs (optional) Salt to taste Heat a pan and add butter. When the butter melts add all the chopped vegetables and salt. Let them cook till all the veggies become tender. Sprinkle mixed herbs and pepper powder. Blend well. In the mean time beat the eggs well along with milk and salt. Milk makes the omelette soft and fluffy. Pour the egg mixture on the vegetables and sprinkle grated cheese on top.

Cover and cook on low flame till the omelette is cooked. Flip over and cook till the other side turns golden brown. Omelette is ready to eat!

Set the oven to toast mode and toast at 150 degree Celsius for 5-7 minutes or till golden brown. 4. Serve hot with a sauce of your choice. 5. Heat a pan and add butter.
