of a large saucepan with a non-stick spray, add the eggnog and sugar, and
bring to a rolling boil over medium-high heatstir constantly! Boil for two
full minutes.
Fold in the marshmallows, cinnamon, and nutmeg. Bring back to a rolling
boil for another 6 minutes, stirring constantly. The mixture will start to turn

brown, which is normal, but if you see brown flakes in the mixture, simply
turn down the heat a little.
Remove from heat and add the butter, chocolate chips, and nuts. Stir until
thoroughly mixed or until the mixture starts to lose its glossy appearance.
Pour into prepared pan. Cool at room temperature. Remove from pan,
remove foil, cut into one-inch squares. Enjoy!

Grandmas Easter Ham
7-8 pound fully cooked smoked ham
1 cup genuine maple syrup
2 tablespoons cider vinegar
1 tablespoon prepared mustard whole cloves
Combine syrup, vinegar, and mustard. Place ham, fat side up, on rack in
shallow roasting pan. Pour about 1 cup mixture over ham and bake,
uncovered, in a preheated 325 oven for 1 hours. Baste every 30 minutes
with additional sauce. Remove ham from oven and score fat into diamond
shapes. Insert a clove into each diamond. Bake ham an additional 30
minutes.

With Fathers Day coming soon I thought you might enjoy learning a bit
about how this holiday actually got its start. OK, some people think that
Fathers Day was invented as an afterthought to Mothers Day. You know,
everyone felt sorry for dads since moms had their special day in May,
soalong came Fathers Day in June! Not true!
The creation of a national day for Dads began back in the 1900s and owes its
start to a young widower by the name of William Smart. A civil war veteran,
William raised his six children single-handedly on a rural farm in eastern
Washington State. When Sonora Louise Smart Dodd, one of Mr. Smarts
children, was grown she wanted to show her appreciation for her father. So,
in 1909, she proposed a day to honor her father in June, the month of her
fathers birth (see, it wasnt an afterthought to Mothers Day!).
The very first Fathers Day followed on June 19, 1910, in Spokane,
Washington. In 1924 President Calvin Coolidge showed support for this
becoming a national holiday. But it was President Lyndon Johnson who
actually proclaimed it a national holiday in 1966, to be celebrated on the
third Sunday of June.
In case youre wondering what to do for your dad this year (or you need
some ideas to suggest to your own kids), here are a few things that are

Have you ever heard the expression Any man can be a Father, but it takes a
special person to be called Dad? How uncanny that I should stumble upon
those words while preparing to write my Father's Day Greetings to you!
The idea for creating a day to honor fathers began in Spokane, Washington.
A woman, Sonora Smart Dodd, thought of the idea of Fathers Day while
listening to a Mothers Day sermon in 1909. Her father had raised her after
her mother died. Therefore, Fathers Day was born in memory and gratitude
by a daughter who thought that her father and all good fathers should be
honored with a special day just as we honor our mothers on Mothers Day.
My wish for you is a special day surrounded by loved ones. If you happen to
be handy at the grill, you can try this recipe for an amazing grilled salmon
its a real Dad-pleaser! Happy Fathers Day!

8 (4 oz) fillets salmon
cup peanut oil
4 tablespoons soy sauce
4 tablespoons balsamic vinegar

Dear [NAME],
I just want to stop a minute and wish you a good July 4th! I hope your day
includes a noisy parade and noisier fireworks. I think once in a while we just
need to cast aside our dull, grown-up personas and cut loose with our crazy
kid personas! So get out there and waste your allowance on fireworks, get a
little BBQ on your chin, get in the watermelon seed spitting contest, and put
on that silly Uncle Sam hat.
In the spirit of the day, I did a little checking about the history of
Independence Day. Guess what? They didnt tell us the whole story in grade
school! In case youre interested, read on to find out what I discovered:
The original resolution (to cut the apron strings from Mother Britain) was
introduced to the Continental Congress on June 17, 1776.
Then Thomas Jefferson and a willing committee put their heads together to
polish up a formal writing for the grand announcement.
The actual resolution was approved on July 2 but the Declaration of
Independence (a separate document) was adopted on July 4, 1776.
It took days, weeks, and in one case, years before all the signatures on the
Declaration were in place. Thomas McKean didnt get his signature on the
page until 1781!
Exactly one year after the Declaration was approved, Philadelphia held a
huge birthday party for the infant republic. But the first official (by
legislative act) celebration was held in 1781 in Massachusetts.

Mimis Perfect Picnic Potato Salad
6 medium potatoes, washed and cut in half lengthwise
3 stalks green onion
2 large celery stalks, chopped fine
cup mayonnaise
4 eggs, boiled
Cajun Seasonings
Salt and pepper to taste
Place potatoes in a large pot with enough water to cover. Over medium
heat, boil until potatoes are tender and can be easily pierced with a fork.
Remove the potatoes and let cool. Remove the skins of the potatoes. Cut
into small cubes and put into mixing bowl. Chop eggs and add to bowl. Add
the celery, onions, Cajun seasonings, salt and pepper and mix well. Add the
mayonnaise and mix again thoroughly. Cover salad and refrigerate for three
to four hours. Serve on a bed of lettuce. Serves six.

quality time with my family and letting my gas grill do some labor for a
change! So heres a heartfelt Labor Day greeting from my family to yours!
Have you ever wondered how we came to celebrate a holiday with the odd
name of Labor Day? Someone always asks, Why is it called Labor Day when
nobody labors on that day?
While there is some disagreement regarding the original founder of Labor
Day, we know that the first Labor Day parade was held by the Central Labor
Union, September 5, 1882, in New York City. Common laborers were
lobbying for recognition and appreciation for their long days and hard work
(back then they received little pay and even less thanks). Over the next
decade unions in other states began to adopt the day as a day of celebration
and recognition of the contributions of the common laborer. Finally on June
28, 1894, Congress declared the first Monday in September a legal holiday.
For us Labor Day brings parades, festivals, speeches, and picnics. Just as

All American Apple Dumplings
2 large Granny Smith apples, peeled and cored
2 (10 oz) cans refrigerated crescent roll dough
1 cup butter
1 cups white sugar
1 teaspoon ground cinnamon
1 (12 fluid oz) can or bottle Mountain Dew soda
Preheat the oven to 350. Grease a 9x13 inch baking dish. Cut each apple
into eight wedges and set aside. Separate the crescent roll dough into
triangles. Roll each apple wedge in crescent roll dough starting at the
smallest end. Pinch to seal and place in the baking dish. Melt butter in a
small saucepan and stir in the sugar and cinnamon. Pour over the apple
dumplings. Pour the Mountain Dew soda over the dumplings. Bake for 35 to
45 minutes in the preheated oven, or until golden brown. Carry to the picnic
and enjoy!

Just a friendly note to remind you that Mothers Day is almost here! Better
not forget all the special women in your life. It was so easy when we were
kids, the only mom we had to remember on Mothers Day was our own. But
nowadays the list of important moms in our lives has grown considerably.
Oh well, why not spread the joy around?
Speaking of Mothers Day, I just learned something interesting about the
origins of the day. It seems that an appreciative daughter by the name of
Anna Jarvis was the spearhead behind the first national holiday. Thanks to
years of work on Annas part, President Woodrow Wilson declared a national
holiday honoring mothers in 1914. The ironic part of the story is that in no
time at all the day became so commercialized that Anna later did an about
face and tried to have Mothers Day done away with! In fact, poor Anna was
arrested in 1923 for disturbing the peace at a convention selling carnations
for Mothers Day! So if you regret that Mothers Day has become so
commercialized, just think how Anna Jarvis must have felt!

The history of Mother's Day is centuries old and dates back to the times of

yummy eggnog recipe? This one puts a special twist on an old favorite!

Chocolate Eggnog Recipe
8 eggs
3 cups chocolate milk
2 cups milk
1 cup cream
1 cup Kahlua liqueur (or delicious, freshly brewed strong coffee)
1 cup dark rum
cup brown sugar
teaspoon cinnamon, ground
teaspoon nutmeg, ground
Pour the milk and chocolate milk into a large saucepan and place over
medium heat. Heat (not boil) the two. In a large bowl, beat the eggs and
brown sugar until they are well combined and of a thick consistency. When
the milk mixture is hot (but not boiling!), add approximately half of it to the
bowl containing the beaten eggs and brown sugar. Whisk well. Pour all of
the egg, sugar and milk mixture back into the large saucepan. Reduce heat
to low. Slowly and gently, add in the Kahlua liqueur/coffee, and then the
cream. Stir until the mixture has thickened enough to be able to coat the
back of a spoon. Remember not to allow the mixture to boil. Remove the
eggnog from the low heat. Stir in the dark rum, ground cinnamon, and
ground nutmeg. Cover with plastic wrap and refrigerate until chilled.
Garnish servings with a pinch of grated chocolate or ground cinnamon.
Serves eight.

My Special Sweet Potato/Pecan Bake
2 quarts cooked, mashed sweet potatoes (not canned)
3 tablespoons bourbon (follow your conscience with the remainder of the
bottle)
1 stick butter (use the real thing)
2 cups pecan halves
salt and pepper
cup packed brown sugar
Before you prepare the dish, first roast the pecans:
In a shallow baking pan spread pecans in one layer and bake at 325 about
ten minutes. Toss hot pecans with two tablespoons butter and sprinkle with
salt. Set aside.
Mix hot mashed sweet potatoes with six tablespoons of butter, the bourbon,
and a pinch of salt and pepper. Place in a three-quart baking dish and cover
with toasted pecans. Sprinkle with brown sugar. Bake at 325 for
approximately 30-45 minutes or until top is brown.

Fabulously Fast and Fresh Cranberry Sauce
1 navel orange
1 cups sugar
teaspoon grated fresh ginger root
4 cups fresh cranberries, sorted, rinsed, and drained
cup chopped toasted pecans
Grate the peel from the orange, being careful not to include the white part.
Juice the orange. Combine the orange peel, sugar, and ginger root in a
heavy saucepan and stir with a whisk to blend. Add the orange juice and
bring to a simmer over medium heat, stirring frequently, until the sugar is
dissolved. Add the fresh cranberries. Cook and stir until cranberries begin to
burst. Remove from heat and stir in the toasted pecans. Cool sauce, stir to
blend, then cover and store in refrigerator.

Preheat the oven to 350. Roll out the cookie dough and shape it into a
heart shape. Place it on a cookie sheet and bake for ten minutes or until the
edges are slightly brown. Let cool about 30 minutes. Beat the powdered
sugar into the cream cheese and spread the mixture on top of the baked
heart. Carefully spread the cherry pie filling over the cream cheese mixture.
Place the chocolate chips in a microwaveable bowl. Microwave one minute
on high. Stir. Microwave 30 more seconds. Stir. Continue to microwave at
30-second intervals until the chocolate is creamy enough to drizzle from the
spoon. Drizzle the chocolate all over the cherries. (Make sure NOT to drip
any water in the chips while you are melting themand dont use a damp
spoon. You will end up with hard clumps.)

Before you start your room re-arrangement, first empty the room
completely. Take down all the wall dcor and remove any rugs. Now, look

The number one mistake people make is to push all the furniture back
against the walls of a den or living room. This makes conversation difficult
and creates a walkway through the middle of the conversation area. Try
pulling your furniture out into the room into a cozy grouping for
