Mackerel tartar with vanilla & lime pickled cucumber, wasabi & soya

Fresh yellow fin tuna croquette with lemon grass, chilli, ginger & tea vinaigrette, papaya & roasted sesame

Aberdeen bay crab & lobster cocktail with chilled garden pea puree, tomberry tomatoes & avruga caviar

Pigeon breast with confit leg, roast celeriac, braised greens, red currant dressing & juniper jus

Whipped goat cheese & courgette flower tempura with truffle honey, grilled baby courgettes, roast pine nuts,
& a lime & herb vinaigrette

Roast best end of lamb with braised shoulder boudin, parsnip & potato gratin, braised lettuce, chanterelles
& a rosemary & roast garlic jus

Spinach & ricotta gnocchi with red pesto, Parmesan shavings, marinated courgettes, red onion & gorgonzola flat bread
