ABSTRAK
Food safety is very important to note, one of the threats in food safety is bacteria that
can damage food, for example Bacillus cereus bacteria. Bacillis cereus bacteria can produce
toxins that cause diarrhea, it is necessary to do a food safety test against Bacillus cereus. PCR
or Polymerase Chain Reaction is an in vitro DNA synthesis and amplification technique. This
method includes a method that is quite sensitive to detect infectious diseases, one of which is
food-borne diseases. In the Bacillus cereus PCR test, it was marked by the discovery of specific
DNA sequences from B. cereus. Bacillus cereus biochemical test is a treatment with the aim of
identifying and determining a pure culture of isolated bacteria based on their physiological
properties, for example indole test, mannitol test, catalase test, glucose test, motility test, and
nitrate reduction test. Bacillus cereus is a pathogenic bacterium that can cause diarrhea,
contamination of this bacterium occurs through the food we consume. Therefore, to avoid
contaminants from Bacillus cereus, the prevention is to always apply a sanitation and hygiene
system because in this way B. cereus bacteria are difficult to contaminate food, if it is
contaminated by these bacteria then the food can no longer be consumed.
