I. INTRODUCTION

A coffeehouse, coffee shop or café (sometimes spelled café) is an establishment

which primarily serves hot coffee, related coffee beverages. Some coffeehouses also
serve cold beverages such as iced coffee and iced tea. Many cafes also serve some type of
food, such as light snacks, muffins or pastries. Coffeehouses range from owner-operated
small businesses to large multinational corporations.

From a cultural standpoint, coffeehouses largely serve as centers of social

interaction: the coffeehouse provides a place which someone can congregate, talk, read,
write, entertain one another, or pass the time, whether individually or in small groups.
Since the development of Wi-Fi, coffeehouses with this capability have also become
places for patrons to access the internet on their laptops and tablet computers. A
coffeehouse can serve as an informal club for its regular members.

cappuccino has more foam and chocolate placed on top of the drink. Further cappuccino
is made in a cup rather than a tumbler glass.

9. Flat White: is a coffee you`ll primarily find in Australia and New Zealand. It is made
the same as a cappuccino expect it does not have any foam or chocolate on top.

mixing chocolate powder with an espresso shot and then adding steamed milk and micro-
foam into beverage.

III. INDUSTRY ANALYSIS

3.1 FUTURE OUTLOOK AND TRENDS

Not too long ago, it was common especially in the rural areas to see the customer
laughing, smiling and have a lovable heart by drinking our coffee. Our safe shop was a sign of
the love and relaxing place were all people are welcome. Being a coffee lovers, everything will
make easily and success.

Each year about this time, we forecast coffee shop trends for the coming year so our
customer can position themselves for success. Whether you run store, this list of 2016 coffee
shop trends is for you.

Sense of Place

Everyone’ over the cookie-cutter cools that defined coffee shops for the last five years.
As living and eating locally has become the trend detour, consumers are more interested in
neighborhood nostalgia and are looking for a coffee shop with an authentic sense of place. If
your store is located on the site of an old barn or a school house, then go with that. Relatively,
nature will begin to take center stay. Inside coffee shops in 2016, and the color green will
especially be on trend.

Interactive shops have always been an easy place to socialize, whether your customers are on a
first date, taking office work “of campus” or catching up with friends from across town. In 2016,
stores will become even more interactive. Look for long communal tables, sugar and milk saved
family styles and baristas who get out from behind the counter to interact with customers. Genius
Bar-type brewing classes will become popular as customers see coffee as more of an experience
than a beverage.

Signature Blends

Nearly every store serves at least one “house special” coffee, whether it’s a flavored latte
or a single-origin coffee. Baristas will start taking that trend to the next level in 2016 by
becoming coffee mycologists. By mixing coffee from different places and different roast levels
based on a customer flavor preferences, a barista will create a bespoke coffee blend for each

customers. The result: a customer experience that can`t be replicated at any other store.

On Top

2015 was year that iced coffee took off, and this year it will be even bigger. Customers
will enjoy cold coffee drinks straight from the top like an up-scale bar or lounge, and nitro coffee
(that’s seeped coffee infuse with odorless, flavorless nitrogen gas, kegged like beer and served
on tap) will continue to be big seller.

3.2 ANALYSIS OF COMPETETORS

Coffee shops have similar characteristics of a bar and a restaurant. Most, if not all, coffee
shops today offer some array of food options of consumers divulge while they are sipping on
their beverage. The trend has been popular among most coffee shops. Especially those who have
opened within the past decade, is the ambiance that you are having a cup of coffee in your home.
The warm, cozy feeling is the one of the most key features in their experience. For teenager and
young adult, it is somewhere that they can gather with friends and engage in conversation.

Another trend is coffee shops tend to take on the role of being more socially responsible.
This is not only for the environment but also, being socially responsible for the health of others.
In the coffee shop industry, some companies have been known to use the remains of the coffee
after it has been used as fertilizer. For the health of the people, many coffee shops have chosen to
go with organic coffee beans that are used in their natural states, and not those have been tainted
with chemicals for preservations.

V. PRODUCTION PLAN

5.1 MANUFACTURING PROCESS

The coffee you enjoy each day has taken a long journey to arrive in your cup. Between
time they`re planted, picked and purchased, coffee beans go through a typical series of steps to
bring out their best.

10 Steps from Seed to Cup

1. Planting

A coffee began is actually a seed. When dried, roasted, it`s used to brew coffee. If seed isn`t
processed, it can be planted and grow into a coffee tree. Coffee seeds are generally planted in
large beds in shaded nurseries. The seedlings will be watered frequently and shaded from bright
sunlight until they are hearty enough to be permanently planted. Planting often takes place
during the wet season, so that the soil remains moist while the roots become firmly established.

Grade 12: Maka-Diyos BUSINESS PLAN – Establishing A Mini Cafe Page 18

2. Harvesting the Cherries

Depending on the variety, it will take approximately 3 to 4 years for the newly planted coffee
trees to bear fruit. The fruit, called the coffee cherry, turns a bright, deep red when it is ripe and
ready to be harvested.

All coffee is harvested in one of two ways:

(1) Strip Picked: All of cherries are stripped off of the branch at one time, either by machine or
by hand.

(2) Selectively Picked: Only the ripe cherries are harvested, and they are picked individually by
hand.

3. Processing the Cherries

Once the coffee has been picked, processing must been as quickly as possible to prevent fruit
spoilage. Depending on location and local resources, coffee is processed in one of two ways:

(1) The Dry Method: is the age-old method of processing coffee, and still used in many
countries where water resources are limited.

(2) The Wet Method: removes the pulp from the coffee cherry after harvesting so the bean is
dried with only the parchment skin left on.

4. Drying the Beans

If the beans have been processed by the wet method, the pulped and fermented beans must now
be dried to approximately 11% moisture properly prepare them for storage.

5. Milling the Beans

Before being exported, parchment coffee is processed in the following manner:

 Hulling machinery removes the parchment layer (endocarp) from wet processed coffee.

 Polishing is an optional process where any silver skin that remains on the beans after
hulling is removed by machine.

 Grading and Sorting is done by size and weight, and beans are also reviewed for color
flaws or other imperfections.

6. Exporting the beans

The milled beans, now referred to as green coffee, are loaded onto ships in either jute or sisal

Grade 12: Maka-Diyos BUSINESS PLAN – Establishing A Mini Cafe Page 19

bags loaded in shipping containers, or bulk-shipped inside plastic-lined containers.

7. Tasting the Coffee

Coffee is repeatedly tested for quality and taste. This process referred as cupping and usually
takes place in a room specifically designed to facilitate the process.

8. Roasting the Coffee

Roasting transforms green coffee into the aromatic brown beans that we purchase in our
favorite stores or cafés.

9. Grinding Coffee

The objective of a proper grind is to get the most flavors in a cup of coffee. How coarse or fine
the coffee is ground depends on the brewing method.

10. Brewing Coffee

Brewing coffee has many tips and methods to make it better.

Top 10 ideas for Coffee Shops to promote themselves

Be Creative
Originality is the mother of all invention and the quest for invention brings about creativity.
Marketing pulls while sales pushes. Undoubtedly, it is almost impossible for companies running
legitimate business to survive without the duo of sales and marketing.

Flyers
Flyers are very potent and effective in covering the local neighbourhood. Flyers reach where
your legs cannot reach and says what voice cannot say. Flyers are a quick insight to your store,
they are best handed out to passersby in the hope that they advertise your shop to someone who
Grade 12: Maka-Diyos BUSINESS PLAN – Establishing A Mini Cafe Page 25
may not already know you exist, or a polite reminder to those who haven’t visited you for a
while. If your coffee shop is in a town or city then the daily commuters are your target market,
assuming that your store is not so far off the beaten track that its an inconvenience to get to for
busy workers.
Vouchers
Free and new are words that does the job whenever and wherever it is needed. People love new
and free things and will love to do what it takes to get it free. Declaring surplus for reasons that
strategically pulls customers in free coffee for first time customers, or free cake with any large
coffee – customers love a deal.

Feedback Cards
A business that relies on objective feedbacks of customers experience growth in the market
compared to companies that shuns customers’ feedback or take such for levity. Learning from
the honest feedback given by your paying customers is crucial to the success of any business.
Coffee shop managers should endeavor to accompany each treat with feedback cards at ask for
customers objective view about product and services rendered. It is also advised that feedback
cards ask for customers personal details so as to enhance shop’s data base. An email address is
all you need here, this way you can build up a customer base and email them once a month with
special offers or new products or menu alterations etc.

Combined Loyalty and Business Cards

Let your business card speak volume about your business. Thus containing business information,
the full address, opening hours, telephone number and directions etc. But why not use the reverse
of your business cards to create a loyalty card… ‘Buy X number of coffees and get one free’ best
motivates customers to crave for more. During quieter periods, rewarding customers will go a
long way in retaining their loyalty. Smart companies give little to get much in return, a give-
away coffee will cost you roughly £1.00, but a loyal customer will help you to grow your
business.

Pavement Signs
Pavement signs are promotional tools that attract customers to your coffee shop. Placing a
pavement sign strategically for passers by which mentions your ‘daily specials’ is best here. Do
you have a soup of the day?, or offer a meal deal – buy a coffee and a cake for a discount. This
type of information is perfect for an ‘A’ board outside your shop, its eye catching and
informative and can be read really quickly by fast walking passers by.

Posters
Posters with attention-grabbing images and memorable messages serves purpose of inestimable
impact as far as awareness or better still, advertisement is concerned. Running coffee shops are
product based but people driven. Therefore, posters are very important instruments in driving
traffic to coffee shops and consequently, give rise to sales increase.

Free Samples
People love freebies. Giving out free samples will help win prospective customers who may be
tasting your recipe for the first time. You never can tell, yours may be better than the one he or
she is used to. Free samples accounts for reasons why businesses lose customers and why others
gain customers, what is important is that the samples should be as quality as the ones paid for. If

you have cake which isn’t shifting fast enough, then cut it into smaller pieces and leave it on the
counter for customers to try. Alternatively take tray of mini coffees and cake out on the street
outside your shop and hand it to customers to try, its very important to be as friendly as possible
here, even if you are dismissed rudely by passers by who have no interest in your wares, always
keep smiling be friendly and say ‘thankyou’. You never know that same person maybe a
customer of yours but without much time to stop today, so its important that your interaction
with them remains friendly and enthusiastic.

Menus
Coffee shops owners should engage an open mind in business dealings. As said, doing same
thing the same way and expecting different result is a sign of madness. Build your menu and give
your product names that attract customers’ interest. It is a marketing strategy that is worth trying.
It’s a simple way to boost your coffee shop’s profits in a single move. You need to be careful
about giving your drinks and food a funny or imaginative name, this could be seen as tacky.

Free Wi-Fi
There is a tiny gap between making it and losing it. That gap is just the little extra offered to
become exceptional in the market. Providing internet facility such as WiFi is a must for
customers these days, making sure your broadband connection can cope with the demand when
your busy will go a long way in placing your brand right in the heart of the customers – there’s
nothing worse than sitting down with a large coffee and the intention of catching up on emails to
find that the WiFi connection is less than your 3G connection. A high speed connection means
that companies, individuals and friends could relocate to your coffee shops for that very
important meeting, appointments and other business activities.
