B. Presentation

Our topic for today is all about sandwich


preparation.
So, in this lesson, you will learn the suitable fillings
and spreads for sandwiches, I know, and I assume
that you are all familiar with the different kinds of

Sandwich is a food item made with two or more


slices of bread with fillings between them. This
very popular and convenient for everyone for their
breakfast, lunchtime food, even snacks or dinner
because it is quickly made and adaptable that
satisfies your cravings.

The filling – consists of one or more ingredients


that are stacked, layered or folded within or on the
structure to form the sandwich. The varieties of
fillings should be carefully selected. The filling can
be hot or cold and comes in any form of cooked,
cured meat, fruit, vegetables, salad or a
combination of any of them.

The filling is the heart of the sandwich. It is place


between or on top of bread. It provides flavor and
body to the sandwich.

TYPES OF FILLINGS
1. Dry Fillings- it is referring to Ingredients such as
sliced or cooked meat, poultry and cheese.

Types of Dry fillings


Meat and Poultry
Meats used as fillings should be cooked, covered
and refrigerated. Slice just before the sandwich is to
be prepared to avoid drying out and lose flavor.
Thinly sliced meats are more tender and juicier than
thickly sliced.
1. Beef products - sliced roast beef, hamburger
patties, steaks, corned beef.
2. Pork products - Roast pork, barbeque pork,
ham, bacon.
3. Poultry - Turkey breast, chicken breasts.
4. Sausage Products - salami, frankfurters,
bologna, liver wurst, luncheon meats, grilled
sausages

Sandwich cheeses
Cheddar types, Swiss types, provolone, cream
cheese, process cheese, cheese spreads.

Fish and shellfish


Most seafood fillings are highly perishable and
should be left chilled at all times.

Seafood Fillings - tuna, sardines, smoked salmon,


shrimp, anchovies, fried fish, grilled or pan-fried fish
fillets.

2. Moist Fillings – refers to Ingredients mixed with


salad dressing or mayonnaise. “Sir, we have the Roast pork,
barbeque pork, ham, bacon.”
Again, can you give the different dry filling in pork “Sir, we have the sliced roast
products? beef, hamburger patties, steaks,
corned beef.”

Mayonnaise based salad


The most popular salads for sandwich fillings are
tuna salad, egg salad, chicken or turkey salad and
ham salad.

Vegetable items
Lettuce, tomato and onion are indispensable in
sandwich production, also, any vegetable used in
salads may also be used in sandwiches.

Miscellaneous

Fruits, fresh or dried, jelly, peanut butter, hard


cooked egg, and nuts.

Spreads
Purposes of Spreads
1. To protect the bread from soaking up moisture “Egg and Mayo ma’am”
from the filling.
2. They add flavor.
3. They also add moisture.

C. APPLICATION

Now let us watch our video presentation on how to
prepare egg sandwich. I will show what are the
tools and ingredients we will use. Also, I will teach
the steps and share some tips on preparing egg
sandwiches. Listen and watch carefully.

Tools/Utensils:
Plate
Spoon & Fork

Casserole
Air fryer/Frying Pan/Oven Toaster
Ingredients:
2 eggs
Mayonnaise
Pinch of Salt and Pepper
Mince Carrot
Slice Tomato
Bread
Lettuce

Procedure:
1.Heat the pot on high heat and bring the water to a
full rolling boil
2.Once the water comes to a boil, put the eggs
using ladle.
3.Set a timer for the type of boiled egg you want,
from 7 minutes to 10 minutes.
4.Toast the bread in a 150° for 5 minutes. (If
making the sandwich with toast)
5.Fill a large bowl with ice and water. When the
eggs reach the desired cooking time, use ladle to
remove the eggs from the hot water and immerse
gently into the prepared ice water.
6.Gently tap the eggs against a hard surface and
peel away the shell. Then put in a bowl. “Yes, ma’am/sir”
7.Mash up the egg with a fork.
8.Mix together the egg, mayonnaise, celery and
green onion. 9.Sprinkle with salt and pepper to
taste. Mix with a spoon.
10.Put a layer of lettuce on one slice of bread,
spread the egg mixture on top of the lettuce, after
that put the slice tomato. Then put another lettuce,
and lastly put another slice of bread on top
