Lesson 1. GOOD KITCHEN AND HOUSEKEEPING PRACTICES

KITCHEN
The most important room in your house: The kitchen mirrors your lifestyle.
• It’s the heart of the home.

• It is Where You Hone Your Skill
KEEP ONESELF CLEAN
• Poor cleaning and personal hygiene habits/practices can cause food contamination, food poisoning, and spread
of infection.
• Wash hands before and after handling raw food, especially meat and poultry.
• Cover any cuts with a bandage and wear clean gloves.
• Wear hair nets to help prevent loose hair from falling on food.
• Use a clean spoon each time you taste or sample food.
• Touch only the handles of flatware/utensils when setting the table.
• Do NOT wear jewelry in food preparation areas, especially rings.
• Do NOT use aprons to dry your hands.
• Use good cleaning and storage techniques to reduce the chance of food borne illnesses.
KEEP FOODS CLEAN
• Thaw food by using the refrigerator, microwave, oven, or by placing sealed packages in cold running water.
• Cook meats to the recommended temperature. Use a clean food probe thermometer.
• Wash fruits and vegetables in running water before preparing, cooking, or eating. It is not necessary to use soap or
specialty produce cleaners.
• Serve hot food while hot or put it in the fridge or freezer as soon as possible once cooled (within two hours of
preparation).
• Never leave food out for more than two hours, including cut fruits and vegetables.
• Use clean dishes and utensils to serve food. Never use the same ones you used when preparing raw food.
• Reheat Safely. Leftover food should be reheated to 165 degrees Fahrenheit in order to kill harmful bacteria.
What are the key steps to preventing food-borne illnesses?
1. Clean – keep yourself and work areas clean
2. Separate – keep raw meat and other raw animal products away from other foods
3. Cook – always properly cook and prepare foods
4. Chill – store foods appropriately both before and after cooking

KEEP THE KITCHEN AREA CLEAN


Maintain the general cleanliness of the kitchen by:
• Disposing of food scraps properly and removing crumbs
• Wiping counters clean with soap and water and sanitize with a disinfectant
• Cleaning all surfaces, including counter tops, faucets, handles and knobs, refrigerator handles, stoves/ovens, other
appliances, etc.
• Do not store garbage in the food preparation area. If possible, store garbage in a cold place to prevent bacteria growth
and pest infestation.
• Inspect kitchen for signs of microbiological growth such as mold and fungi. Clean the affected area appropriately.
• Inspect the kitchen for any plumbing leaks. Notify your supervisor to get it repaired.
• Choose an effective cleaning agent or disinfectant for the job.
• Clean the food storage area regularly.
• Clean up spills ASAP
KEEP EQUIPMENT CLEAN
• Clean your kitchen utensils in hot water with an antibacterial detergent.
• When sanitizing kitchen tools and equipment, use either boiling water or a solution of bleach and water.
• Store your tools in a regularly cleaned plastic or metal box to keep the germs away.
• Scrape any food debris into a bin before cleaning and sanitizing tools and equipment.
• Fill your sink with warm to hot water and an antibacterial detergent.
• Use a clean sponge or brush to scrub each item thoroughly, making sure to remove all bits of food and getting into
all the little, hard-to-reach areas.
• Either leave to air dry or use a dish cloth, which should be cleaned with a quality detergent, such as, to ensure
you’re properly cleaning and sanitizing kitchen tools and equipment.
SAFETY PRECAUTIONS IN THE KITCHEN
1. Keep kids and pets out the way
2. Don’t rush
3. Wipe up spills immediately
4. Learn how to use knives
5. Check that your oven and other kitchen appliances are turned off
6. Keep a first aid kit in the kitchen
7. Wear safe clothing and footwear
8. Sanitize your kitchen
9. Ensure your fire alarm works

Importance of food?

• Foods provide nutrients so we can grow and be active and healthy.

• Energy for activity, growth and all functions of the body such as breathing, digesting food, and keeping warm.
• Materials for the growth and repair of the body, and for keeping the immune system healthy.
Reasons for Cooking Food

• To improve the flavour and appearance of food


• To make food easier to digest and be absorbed by the body
• To remove natural toxins, present in raw food through heat
• To destroy microorganisms in food that causes in food that causes decay and diseases
• To preserve food and extend its shelf life.
