Choco Valencia

Ingredients:

Brownie base:
120g dark chocolate
110g butter
150g condensed milk
20g cocoa powder

1/2tsp baking powder


80g flour
50g water
2tsp coffee

Method:
Combine flour, cocoa powder, baking powder.
Melt dark chocolate and butter.
Then add condensed milk and mix well.
Mix coffee and water and keep it aside.

Mix wet and dry.


Add the coffee mixture and mix well.

Ring size 10 by 4.5.


Bake at 160 C for 30 mins.
Chocolate mousse:

80g cream
60g butter
220g dark chocolate
220g whipping cream

Method:
Mix chocolate and cream and microwave it.
Mix well.
Add butter once the temperature drops.
Whip up the cream till soft peaks and add the chocolate ganache and mix well.

Orange curd:
80g butter (unsalted)
100g sugar
3tbs corn flour

180g orange juice


3-4 orange zest

Method:
In a saucepan add sugar, corn flour, orange juice, and orange zest.

Cook till it thickens.


Once the temp drops add the butter.
