    BANANA MINI MUFFINS


    You need:

    • ½ cup butter, room temperature


    • 1 cup granulated sugar
    • 2 eggs
    • 2 large bananas, ripe, mashed
    • 1 tsp vanilla extract
    • 2 cups all-purpose flour
    • ¼ tsp salt
    • 1 tsp baking powder
    • ½ tsp baking soda
    • muffin cups
    Steps:

    - Grease 12 muffin cups.


    - Cream the butter and the sugar with an electric handheld mixer until light and fluffy.
    - Beat in the eggs, one at a time, beating after each addition.
    - Add the bananas and the vanilla and beat until smooth.
    - Mix the flour, the salt, the baking powder, and the baking soda together.
    - Stir the flour mixture into the butter mixture.
    - Stir until the ingredients are moistened.
    - Spoon the banana muffin batter into the prepared muffin cups.
    - Bake at 400°F for about 15 to 18 minutes, or until tops are lightly browned.
