INTRODUCTION

The main ingredient for baking bread is flour, so choosing it correctly is the key
to making delicious bread.

Flour can be divided into two groups: flour for baking bread (rich in gluten: for
example, wheat) and other flour (rye, buckwheat, etc.), which should be used in
addition to the main flour for baking bread (10-50%).

Wheat flour. The best bread is made from wheat flour of different varieties.
Wheat consists of an outer film (bran), and an inner core containing wheat
germ and endosperm, which forms gluten when mixed with water. Gluten
stretches like rubber and the gases released by the yeast during fermentation
are trapped, causing the dough to rise.

Premium wheat flour. In these flours, the outer bran and germs are removed,
and only the endosperm is left, which is ground to obtain the highest grade
wheat flour. It is important to use durum flour or premium wheat flour because
they have a higher protein content for gluten formation.

Wholemeal flour. Wholemeal flour contains bran and wheat germ, which gives
it a nutty flavor and produces bread with a coarser and grainy texture. For such
bread, you must also use durum wheat flour or wholemeal flour. Bread made
with 100% wholemeal flour will be denser than white bread. The bran present in
the flour prevents the release of gluten, so the dough from the coarse flour rises
more slowly.

Dark flour. It can be used in combination with white flour or pure form. It
contains about 80-90% wheat grains, and therefore the bread is lighter but still
very aromatic. Try using this flour in your basic white bread setting, replacing
50% of the white durum flour with dark durum flour. You may need to add a
little more liquid.

Other kinds of flour. In combination with premium wheat flour and wholemeal
flour, other flours such as rye can be used to bake traditional bread such
as classic rye bread. Even a small amount changes the taste of the product
noticeably. Do not use it neat or it will make a sticky dough and result in thick,
heavy bread. Flour made from other cereals, such as millet, barley, buckwheat,
corn, and oats, has low protein and therefore cannot provide enough gluten to
bake traditional bread. Such flours can be successfully used in small quantities.
Try replacing 10-20% of premium wheat flour with one of these varieties.

Salt. A low amount of salt is very important for baking bread as it helps to form
the dough well and to add flavor to the prepared bread. Use fine salt or sea salt,
but not coarse salt, which is best sprinkled on top of hand-sculpted buns for a
crispy crust.
Salt strengthens the gluten structure and makes the dough more elastic.
The salt inhibits the growth of the yeast and prevents the dough from rising too
high and then breaking off.
Too much salt will prevent the dough from lift properly.

Sweeteners. Use white or brown sugar, honey, malt extract, golden syrup,
maple syrup, or molasses.
Sugar and liquid sweeteners add color to the bread and give it a golden crust.
Sugar absorbs moisture, thereby improving the preservation of the bread.
Sugar gives the dough extra activity.
Sweetbreads contain moderate amounts of sugar, while fruits, jelly, or icing
provide extra sweetness. To bake this type of bread, use the sweet bread
setting.

Yeast. All recipes in this book have been tested using dry yeast, which does
not need to be diluted with water first. They are placed in a groove made in the
flour to keep them dry and separated from the liquid before mixing.

Baking powder. It can only be used for making fruit cakes and other baked
goods, but not for baking bread.

Butter and oil. This component makes your bread softer and tastier. You can
use all types of fats. If you are using butter, cut it into small pieces so that it is
evenly distributed in the dough.

Milk and dairy products. They alter the taste and texture of your bread by
creating an emulsion effect. You can use whole or dry milk.

Eggs. They enrich the dough, give the bread color and contribute to a soft
texture.

Cycle:

Basic / White / Standart.


For classic bread with wheat flour or flour mix.

Sweet.
For sweet bread with raisins, dried fruits, chocolate, coconut, etc.

Gluten-Free.
For gluten-free bread and mixes.

Whole Grain.
For bread made from whole grain flour or rye flour. The bread will be leaner and
heavier

French.
For lush bread made from fine flour. Usually, the bread is fluffy and crispy.

Quick.
For yeast-free bread. Kneading, rising, and baking loaf within a timeless than
for basic bread.

Cake.
For sweet pastries. Kneading, lifting and baking take place, but with the help of
baking soda or baking powder.

Quick Yeast Bread.

yeast.

100% Whole Grain Serves: 1 loaf (2 lb)

Bread
Preparation
1. Add all ingredients to the baking pan.

Airy Whole Grain Serves: 1 loaf (2 lb)

Bread

1. Add all ingredients to the baking pan.

Banana Cinnamon Tea Serves: 1 loaf (2 lb)

1. Place the butter, golden syrup, and
sugar in a small saucepan and heat

Bavarian Bread
Preparation
1. Add all ingredients to the baking pan.
2. Place the pan in the bread machine,

Beer Bread
Preparation
1. Add all ingredients to the baking pan.

Liqueur
Preparation
1. Add all ingredients to the baking pan.

Walnuts
Preparation
1. Place walnuts, lemon, and orange zest
into a fruit/nut dispenser or add them

Bread with Cheddar Serves: 1 loaf (2 lb)
Cheese and Cayenne
Pepper Preparation

1. Wash the pepper, remove the seeds

Bread with Cranberries, Serves: 1 loaf (2 lb)

Almonds and Pecans


Preparation
1. Grind the pecans coarsely. Chop dried
cranberries.
Ingredients 2. Place nuts and cranberries into the
automatic fruit/nut dispenser or add
1 cup of water
¾ cup plain yogurt them after the first beep.
19 oz (540 g) unbleached white flour 3. Add other ingredients to the baking

Cheese
Preparation
1. Cut the cheese into small cubes. Place

Walnuts
Preparation
1. Place figs and walnuts into a fruit/nut

14 oz (400 g) dark rye flour 3. Place the pan in the bread machine,

the cycle.
5. When the cycle is completed and the bread is cooked, carefully remove the pan from
the machine.
6. Remove the loaf from the pan and allow to cool on a wire rack for at least 20 minutes.

Bread with Honey, Serves: 1 loaf (2 lb)
Apples, Walnuts and
Chocolate Preparation
1. Add all ingredients to the baking pan.

Bananas
Preparation
1. Add all ingredients to the baking pan.

Bread with Poppy Seeds
Preparation
1. Add all ingredients to the baking pan.
