Historical Background
Moorish Influence
Practical Information
Must-Try Dishes
1. APONIENTE
Three stars for Michelin The vision
and extraordinary talent of
Aponiente's owner, Angel Leon,
and head chef, Juan Luis Fernandez,
make it one of Europe's best
seafood restaurants without a doubt.
Collectively, they have produced
something remarkable: a molecular
gastronomy temple that celebrates
lesser-known fish and tastes like
ling, pollock, and herring rather
than the rarest of fish and flavors.
But the scene is simple enough: a
brand-new, light-filled, spacious
dining room where guests may
choose from two tasting menus, all
of which are devoted to Leon's
passion for seafood, or a massive
27-course alternative. Expect
delicacies like cumin oysters,
marinated dogfish, and shrimp
tortillas thanks to Fernandez's
creative and entertaining cuisine.
Furthermore, the service is superb
—it's sophisticated, friendly, and
not in the slightest bit stuffy or
chilly. Wine enthusiasts will also be
pleased with Angel Leon's well-
selected selection, which includes
both excellent wines and more
unusual selections from around the
Spanish heartland.
2. ATRIO
Where else in Spain might you
expect to find such outstanding
cookery matched with over two
hundred pages of superb wines
from across the world? Atrio is a
venue that puts a chef's mastery
over exaggeration to the test.
Located in the stunning Caceres
city, Atrio is led by master head
chef Tono Perez, who is regarded
as one of Spain's most renowned
culinary geniuses. Perez now
provides his customers with two
tasting menus, one including classic
Atrio dishes and the other with
innovations. The emphasis is on
accurate, creative, but understated
cuisine that leaves out some of the
more bizarre tastes that his
contemporaries have embraced.
Truly, each meal that Perez crafts is
poetry, a masterful fusion of tastes
and textures that have to be
experienced to be believed.
Delightful dishes include careta,
which consists of duck, squid, and
curry sauce, and torta del casar,
which is a remarkable cheese
created from sheep's milk and
served with quince ice cream.
In if that wasn't enough, Atrio has
one of the biggest wine cellars in
Europe, filled with unique finds,
oddities, and some of the best (and
priciest) wines ever produced. An
important place to visit for any
traveler interested in food exploring
Southern Spain.
3. ABANTAL
Greetings from the best restaurant in
Seville, Abantal. Run by the only
Michelin-starred chef in Seville,
Julio Fernandez Quintero, it is a
masterful reworking of Andalusian
classics utilizing only the best,
freshest ingredients. Despite being
located on an unremarkable side
street distant from Seville's historic
center, Quintero's cuisine is neither
pretentious nor unapproachable;
rather, there is a pleasant, modest
approach to the food and the
restaurant itself. A starter of Iberian
pork and codfish "paella" might be
served, and then lamb neck filled
with stewed chard and a salad of
apples and fennel. Serve
lemongrass soup and mango
cannelloni filled with white
chocolate mousse and a slice of
cheese as a finale. Additionally,
there are tasting menus with seven
or even nine courses and
corresponding wine pairings for
die-hard foodies. The vast and
fairly priced wine range is
complemented by the skilled and
kind service.
4. TERRAZA LAS TOMASAS
The most romantic restaurant in
Andalucía is undoubtedly Terraza
las Tomasas. The stunning,
whitewashed patio with unhindered
views of Granada's Alhambra
castle alone makes las Tomasas
worth the cost of a meal in and of
itself.
Well-dressed patrons frequent the
restaurant in droves on weekdays
and in large groups on weekends.
This restaurant is a hidden treasure,
but it offers more than just a great
location—the food is excellent. It
has a selection of foreign selections
along with some local favorites.
The menu may be as diverse as
grilled octopus, grilled scallops
with chestnut puree, porcini
mushroom risotto, and a delicious
peppercorn-sauced veal sirloin
steak. Not surprisingly, they are
among Granada's most sought-after
tables, with a wonderfully eclectic
wine selection and warm,
welcoming service.
5. ESLAVA
The phrase "designer tapas" is most
often used to characterize the
amazingly daring concoctions at
Seville's enduringly well-liked
tapas eatery. Its proprietors have
transformed a long-standing
culinary heritage into delicious,
inventive tiny servings that burst
with flavor, so this is no typical
Andalusian hole in the wall. One of
Seville's trendiest tapas bars, this
one pushes the envelope on all
fronts, while others may be
contentedly modest and of high
quality. Carpaccio with spinach,
artichokes, and Manchego cheese,
marinated sardines with aubergine
and yogurt, and yema with foie gras
are a few of the delectable
concoctions. A five-star experience
is completed with excellent service
and a fantastic selection of Sherry
by the glass.
6. Modesto
One of Seville's friendliest and
liveliest restaurants, Restaurant
Modesto is an institution in and of
itself, and the welcome you'll get
there is anything from humble.
Locals congregate in the large
ground floor bar to enjoy tapas and
Sherry, while the first level has an
elegant dining room furnished with
typical Andalusian furnishings.
But the food at Modesto is
unpretentious and far distant from
the cutting edge of Basque
molecular cuisine. All this,
however, is probably excellent
news for Modesto, a friendly eatery
that has won over the hearts of both
residents and visitors with its
straightforward, unpretentious
cuisine and wonderful ambiance.
The freshest seafood—the Marqués
de Villalúa clams being a particular
highlight—is among the top options.
Or sample the lamb chops that are
said to be among the finest in
Seville—grilled lamb-fed milk!
That being said, you can be certain
that anything you order will be a
sincere celebration of life's
wonderful things when your cuisine
arrives—fresh and hearty.
7. LA MONEDA
José Luís Inchausti, the proprietor
of this little family-run restaurant,
specializes in fresh fish in all its
beautiful forms.
Since its 1991 opening, La Moneda
has drawn a devoted following of
those seeking the best prawns,
turbot, and oysters in the area. What
is there not to enjoy about the
modest décor, vibrant atmosphere,
and welcoming staff? Sea bream
with a salt crust, grilled turbot,
swordfish in Manzanilla, and salt-
baked langoustines are a few
examples of the daily specialties
shown on the chalkboard. Indeed, a
haven for seafood lovers!
