INTRODUCTION
Food is a basic necessity. The industry which deals with
preparing food items/products refers to the food service
industry. The food service industry is and will always
remain in high demand because of its genre. These
industries include restaurants, fast foods, school and
hospital, cafeterias, catering operations, food carts and
food trucks etc. Restaurants and fast foods mainly
contribute to the food service industry
What is Food services?
Food service is a process or system
where food is served to a guest or
customer in an establishment.
History of food services in the
Philippines
The history of foodservice is closely
associated with travel. Throughout
history, merchants have travelled
extensively to trade with other nations or
tribes.
The Beginnings of Foodservice in the Philippines In the Philippines,
foodservice existed as early as the time of the barangay system. The datu had
to feed his people including the slaves or alipin. Hence, it required
the service of food in great quantities.

• In982 A.D

the earliest Chinese-Philippine trades was recorded and are the forerunners
of the developmental rudiments of the commercial type of foodservice.
During the Spanish period, Chinese food became popular that were served
under more permanent structures. A letter of a civil servant to King Philip
II of Spain reported that the Chinese Community had many eating houses
where the Chinese and natives eat their meals.
Categories of Foodservice
Industry
The full-service

restaurant segment ranges from casual to fine dining. The


typical price at a full-service restaurant can vary anywhere
between moderate and expensive depending on the cuisine
type. Customers dining at a full-service restaurant are
usually looking for an experience alongside great food.
Quick Service
Quick service restaurants are for those
pressed for time and include fast-food
restaurants and other grab n' go style
options. Delivery services can also be
considered a part of the quick-service
industry
Eating and Drinking Place
The eating and drinking place segment includes
refreshment stands and caterers. Food at these
places is usually consumed on-site. For example, a
catering company would be preparing food for a
company event. Unlike full service, attendees
select food from a buffet-style spread.
Refreshment vendors sell food for entertainment
or sports venues that are pre-manufactured.
Retail Host
Gas stations, grocery marts, and even casinos have retail-host
restaurants. These are part of the food supply chain of brand-
name food and beverage companies such as coffee from
unique brands or fast-food chains. Some convenience stores
are replacing franchises with their own brand of quick-service
restaurants and menu items. These locations give
convenience and grocery store customers the option of
freshly prepared and familiar meals that do not hurt their
wallet. The food usually is not consumed at the location.
Factors Affecting the growth of food service
The factors that influences the growth of food services
industry is anything that affects the demands and
supplies in the industry which can also affect the growth
of food service. It includes, population growth, increase
in disposal, increase in the numbers of working women
and Use of Artificial products, Altetants in food products,
Quality, Taste, and Accurate Quantity. Also these factors
include: Menu items, Use of convenience foods, Type of
service, Quantity of meals and number of meal periods,
Facility layout and design and production equipment,
Work environment and number of hours worked.
