REGION 4

Region 4 in the Philippines, also known as CALABARZON, is composed


of five provinces: Cavite, Laguna, Batangas, Rizal, and Quezon. The region
is known for its diverse agric ultural production, which includes rice,
coconut, sugarcane, fruits, and vegetables. Here are some of the food and
dietary practices in Region 4

HOME DISH
Pancit habhab or pancit
Lucban is a traditional Filipino
type of pancit originating from the
Quezon province. The dish is
usually made with a combination
of dried flour noodles (miki
Lucban), pork belly slices, beef
stock, shrimp, pig liver, bok choy,
peas, carrots, onions, garlic, soy
sauce, oil, and black pepper
TRADITIONAL FOOD
Uraró are traditional Filipino cookies
originating from the Tagalog people of
southern Luzon. The cookies are
traditionally made with arrowroot
flour, duck egg yolks, milk, rendered
lard, and sugar. Once prepared, the
mixture is baked in a traditional
Filipino clay oven called a pugon, and
the resulting cookies should have a
melt-in-the-mouth quality, as well as
milky and buttery flavors.
FOOD DELICACIES
Buko pie is a traditional Filipino
dessert which consists of a flaky
pie crust combined with creamy
coconut filling. It is prepared with
buko, the young coconut flesh
which is cooked alongside plain or
condensed milk, cream, and sugar
until it transforms into a thick and
creamy custard.

Adobong palakâ is a
traditional stew this exotic type
of adobo is usually made with a
combination of frogs, vinegar,
soy sauce, garlic, sugar, water,

Sago't Gulaman - This is a


refreshing and sweet
beverage made from sago
(tapioca pearls) and gulaman
(gelatin). It is commonly sold
by street vendors and is a
popular drink during hot
summer days.

Tuba - This is another type of


coconut wine that is made from the
sap of the coconut flower. It is less
potent than lambanog and is often
mixed with other ingredients such as
honey or ginger to create a sweet
and flavorful drink.

CAVITE
FAMOUS FOOD
As for Cavite delicacies, you can
choose from pichi-pichi,
kalamay sa ube, biko, maja
blanca, minatamis na saging
and bibingkoy. For their viand,
what captured my attention is
their kare-kare version called
Pipian.

General Mariano Alvarez


(GMA), Cavite, and
Dasmariñas. GMA also
takes pride in being known
as the “Mushroom Capital
of Cavite.” The cultured
oyster mushroom is GMA
Cavite's main product.
TRADITIONAL FOOD

Cavite is well known for its


fishing culture—it is especially
abundant in squid, shrimp,
mussels, and oysters. The
Paella Negra is an ode to Cavite's
rice and fish-producing period.
Because shrimp is highly
abundant in the area, it used in
this tasty Pork Binagoongan.
EXOTIC FOOD

Kamaru - This is a dish


made with sautéed mole
crickets that are seasoned
with onions, garlic, and
tomatoes. It is a popular
delicacy in Pampanga, but
can also be found in some
restaurants in Cavite.

soybean curd, sago pearls,
and arnibal (a sweet
syrup). It is a popular
breakfast food in the
Philippines and is often
sold by street vendors.

Tsokolate - A rich and creamy

or as a dessert. It is made from
tablea (local chocolate tablets)
and is best enjoyed with pandesal
(Filipino bread) or ensaymada

The province is also known
for its sweets, such as the
famous Panutsa or Peanut
Brittle, which is made from
roasted peanuts and
caramelized sugar.

saltwater fish, this Batangas
delicacy has a salty flavor. What
makes its saltwater component
so delicious is the smoking
procedure it goes through in
order to keep it fresh longer. In
other words, the fish dish tinapa
is particularly well-known in the
town of Lemery, Batangas

Tawilis is a freshwater
fish that can only be
found in Taal Lake,
Batangas. It is typically

is commonly eaten as a

Region 5 in the Philippines, also known as the Bicol Region, is one of the 17 regions of the
country. It is located in the southern part of Luzon Island and includes the provinces of Albay,
Camarines Norte, Camarines Sur, Catanduanes, and Sorsogon.

The Bicol Region is known for its natural beauty, diverse culture, and spicy cuisine. It is home
to the world-renowned Mayon Volcano, which is famous for its perfect cone shape and is a
popular destination for hikers and adventurers. The region also boasts pristine beaches, lush
forests, and scenic lakes and waterfalls.

chili peppers, wrapped in taro leaves and cooked in coconut milk.

Pancit Bato Pamdecillos


Camarines Sur is famous for another type of pancit called Pancit Bato.
Its texture is similar to a typical pancit canton but made chewier and
tastier. It is cooked with soy sauce, vinegar, petchay, and shrimp as the
main ingredients. Also, it is best served in the morning with hot pandesal.

Pamdecillos is a famous and original delicacy of Vinzons, Camarines


Norte. Its name is derived from the word pan which means bread. This is a
kneaded dough baked with an evenly spread sweet blend of pili and
condensed milk filling cut into tiny bite-sized pieces

I was actually confused when i first heard the term they used for this product. They’re
calling it Santan and theyt first thing that strikes my mind is the tiny breed of flowers.
Santan is basically another pili delicacy. It is a coco jam mixed with pili nuts. I don’t know if
Santan is a Bicolano term but regardless of it, this sweet delicacy is ideal spread for bread.

Pandecillos
Pandecillos are nutty bread that is filled with caramel or yema-like spread. It is also
available in Jannah’s pasalubong and is also one of their best sellers. Pandecillos is
made from flour, sugar, butter, condensed milk, eggs, peanuts and cheese.
Cacao Tableas
Considering that Bicol is one of the hot spots of Cacao industry, Cacao products are very
common in this region. Cacao tableas are very ideal to make Pinoy hot chocolate. 2-3 discs
of cacao are ideal enough to make a rich-tasting cup of hot chocolate. It only takes few stirs
to dissolve the tableas on a cup of hot water. For best tasting, you can add milk and pinch of
sugar
Mazapan is a native camote (sweet potato) candy. It is locally known as
“taldis” and is often served during holidays and festivities, but can be enjoyed
year-round. Its ingredients are all-natural and safe—no preservatives required.
Just sweet potato, sugar, and sometimes can be added with whole or ground pili
nuts molded square or rectangular. It is made by boiling the fleshy part of sweet
potato and letting it dry out in the sun. Isn’t it amazing how Bicolanos craft their
own desserts? You should try this as soon as you visit Bicolandia.

Sili chocolate is made from a combination of chocolate and spicy chili


peppers, which creates a unique and delicious taste that is both sweet and
spicy. The level of spiciness can vary depending on the type of chili used, but it
usually provides a mild to moderate kick that adds an exciting twist to
traditional chocolate.

Ginataang Santol Inangit Pili nuts


Ginataang Santol - This dish is made of santol fruit cooked in coconut milk
with shrimp, pork, and spices. The santol fruit has a sour flavor that
complements the creamy coconut milk.

Inangit - This is a dessert made of glutinous rice cooked in coconut milk and
sugar, then wrapped in banana leaves and steamed. It is usually served with
grated coconut on top.

Pili nuts - Pili nuts are a popular snack and ingredient in Camarines Norte.
They are rich in flavor and are used in various dishes such as desserts,
pastries, and confectioneries.

Adobong sawa Balaw-balaw


Adobong sawa - This is a dish made with snake meat that is
marinated and cooked in vinegar, soy sauce, and spices. It has a

strong flavor.

Seafood Tilmok
Seafood - Since Catanduanes is an island province, it's no
surprise that seafood is a staple in the local cuisine. Some of
the most popular seafood dishes include grilled fish, shrimp,
crab, and squid.

Tilmok - Tilmok is a dish made from grated coconut meat, taro


leaves, ginger, and chili peppers. It's wrapped in banana leaves and
cooked over a fire.

Bukayo
If you’re thinking of pasalubong, then add bukayo to your list! Mostly sold on
provincial buses and souvenir shops, this sweet and chewy delicacy is made with
coconut strips, coconut water, and sugar mixture, and then formed flat circles and
left to harden. But take note of its high sugar content!
Binutong

Latik
This famous kakanin is a sticky rice treat made with glutinous rice, coconut milk,
and additional malunggay juice to enhance the flavor and color. It is usually
bought in a box, perfect for pasalubong. Oftentimes, it is served for breakfast,
afternoon snacks, and dessert.

Before mashed potatoes even became popular in the country, there was nilupak.
This delightful treat is made up of cassava, coconut and condensed milk, and nut
for additional texture. This one’s a favorite dessert in the province.

Camoteng Kahoy
Often called Balanghoy, this Camoteng Kahoy delicacy is no stranger in
Catanduanes. As a matter of fact, you can make this in the comfort of your home!
It’s a simple local dessert usually made with cassava, brown sugar, vanilla extract
plus water. Sometimes, locals opt to add coconut milk for additional thickness.

Catanduanes’ very own Ginataang
Suso. Although most of us are
familiar with this dish, the locals
sure know how to make this one
stand out. To make this rich and
creamy viand, all you need are the

garlic, green chili, coconut milk, and
of course, snails.

Albay is known for its homegrown premium pilinuts. The usual
favorites are crispy candies pilinuts with honey, roasted and salted pili,
mazapan, butternuts, caramelitos, pastillas and sesame seed coated
pilinuts.

Pinangat is a version of laing, a famous native chili-hot dish of a little town of


Camalig,Albay which is a blend of ground pork, coconut milk, diced shrimps, and
chili wrapped in gabi leaves. This dish is a well-known among Bicolanos because
of its distinctive taste that a Bicolano could perfect

Home to the 1st Colonial Grill restaurant is the “sili” (chili) ice cream. This
ice cream, with “siling labuyo” as one of its main ingredients, comes in different
levels of spiciness with the Mayon Volcano level sili ice cream as the spiciest of
them all. The harmony of a cold, creamy and spicy ice cream is what makes this
dessert a hit among local diners and as well as tourists.

Guinobatan Longganisa is a pork sausage in diminutive size and with


distinct salty-sour fla or, dipped in vinegar and served with egg.

Made of ground rice with coconut candy as a filling, Ligao’s Rice Puto is the
most popular rice delicacy of its kind in Albay. Wrapped in a banana leaf, both
children and adults can enjoy this sweet specialty of Ligao City.

The pride of Guinobateños. It is smaller than the regular longanisa but has a
rich distinct taste. Infamous in Guinobatan Albay and known to be delicious by
anybody who has ever tried it!

Muscovado is locally known in Polangui as sankaka and is made of coconut


milk, brown sugar, and ground glutinous rice. Kalamay can be eaten alone but is

plain, with cheese, with salted egg, with ham or a combination of all

This is an easier version of the Irosin kinagang, which Amy serves as an


appetizer special at their restaurant. They combine buko, crabmeat, sliced
scallions, and lemongrass, wrap the mixture in banana leaf, and steam it. As a
variation, you could add shrimp or scallops to the crabmeat for a more full
seafood flavor.

One of Sorsogon's most popular products is the pili nuts that are indigenous to
the province. These nuts have also become a crowd favorite and have been
incorporated into many different dishes by the locals. The most common
delicacies that use pili nuts are the roasted pili nuts and the pili nut brittle

Kalamay which means sugar is a sticky sweet delicacy that is popular in many
regions in the Philippines like Sorsogon. It is made of coconut milk, brown sugar,

vanilla. Kalamay can be also eaten alone but it usually used as sweetener for a
number of Filipino desserts and beverages.
Suman is a rice cake popular in Sorsogon. It is made from glutinous rice cooked
on coconut milk, often wrapped in banana leaves or buried palm leaves for
steaming. Suman is very popular in Sorsogon during fiestas. Because suman are
not easily spoiled and can be eaten during lunch, breakfast, dinner, and even
snacks

One of the most known
delicacies of Sorsogon is
Baluko. Baluko is a pen shell
that looks like scallops and
mussel that is found mostly in
rocks or sandy, shallow ocean
bottoms. It is a triangular or
wedge type of shell and grows
up to 12 inches long and 6.5
inches wide

Masbate grow malunggay so most of our dishes are served with it, like the
Ginataang malunggay, which is cooked almost like the pinakul-aw, without
the daing

Derby is popular in the province so chicken is almost always available. One


unique dish that we cook is sinangkutsa.
The cooking process is similar to chicken curry, only we use something sour,
like tamarind or batuan fruit, instead of a curry mix. We also put saba and
wild ube for a thicker sauce. Just imagine sinigang na manok, with coconut
juice as the soup and that’s sinangkutsa.

Masbate's best OTOP (One


Town, One Product)
specialty could be the
"Carmelado", the
province's version of the
Pastillas de Leche. This
native delicacy is made of
pure carabao's milk and a
little of white sugar.

If you know bopis (sautéed pork/beef lungs and heart), it’s easier to relate to this
dish, because only the coconut juice makes Kandingga different. For
Masbatenos, it’s prepared extra spicy.

You might know jackfruit with coconut juice, but most of us haven’t heard of
using its seed as ginataan. Oddly enough, it tastes just like peanuts!
Boiling the seed may take time, but it’s worth it – just make sure to boil the
seeds until it completely softens before putting in the gata. Season with salt.

Ginataang Kurot or wild yam with coconut juice is can also be served for
breakfast, merienda, or as a snack. However, the preparation of kurot itself is
not easy, because of its poisonous nature, so it’s best to buy directly from
vendors.

Some people consider offering it first to an animal before eating it.

When cooking, make sure to bring the kurot to a boil for a longer time, and
wait until it softens before putting in the coconut juice. It can be served sweet
or salty.

Fruit shakes - Masbate is known for its abundant fruit trees, so you can find a
variety of fruit shakes made from locally grown fruits such as mango, papaya,
and banana.

Tubâ - Also known as coconut wine, tubâ is a traditional Filipino alcoholic drink
made from fermented coconut sap. It's a popular drink in many parts of the
country, including Masbate.

ice blended together to create a sweet and creamy beverage. It's a popular

Region 6, also known as the Western Visayas Region, is a region in the


Philippines located in the central part of the Visayas island group

Inasal na manok is a unique Filipino grilled chicken dish which originated in
Bacolod and became the signature dish of the entire Visayas region. It employs
