INTRODUCTION
● Botanical Name: Syzygium
aromaticum and also
to Eugenia caryophyllata
● Other Names: clove
bud,Lavang.
● Family: Myrtaceae
● Clove got their name from
French word clou because of
their appearance.
● Once harvested and dried
they looks like a small
irregularly shaped nails.
● It is the spice in the Indian
traditional kitchen.
CHEMICAL COMPONENTS
• The essential oils present in it are eugenol,
caryophyllene, alpha–humulene, eugenyl,
naphthalene, sesquiterpenes, methyl
salicylate pinene, and traces of other
phenolic components.
• Eugenol is the main component constituting
81.1% of the oil.
• Eugenol is used as an antiseptic,
antibacterial, and analgesic agent in
traditional medicine. Studies have reported its
role in photochemical reactions and its anti-
inflammatory, insecticidal, antiviral, and
antioxidant properties.
CULTIVATION AND COLLECTION
● Cultivated in hilly areas of tamilnadu, kerala and
Karnataka in india, these places have rich loamy soil
and red soils.
● Also cultivated in Zanzibar, pemba, penang,
Madagascar, caribean island, srilanka.
● The site selected for the cultivation needs good
drainage since the crop can’t withstand water logged
condition.
HARVESTING AND PROCESSING
● The flowering season varies from September to October in the plains to December to
January in high altitudes.
● The unopened buds are harvested when they are plump and rounded and before they
turn pink.
● The opened flowers are not considered as a spice.
● The buds are collected by hand picking method or beating with bamboo stick.
● The clustered buds are separated and spread for drying.
● The correct stage of drying is reached when the stem is dark brown and rest of the bud
is light brown.
