Let's think again about those scenes when Dracula chased the plane under the sunlight to bring Jonathan back. It's not known exactly how much time he spent in the sun, but it was quite a long time. And after that, he got back to the hotel safely.
From what we know, the vampires of the Hotel Transylvania universe are vulnerable to the sun and are afraid of it. Accordingly, sunlight is one of the ways to kill them and is the main way for a vampire to end their life.
What happens when sunlight hits a vampire: Upon contact with sunlight, the vampire's skin immediately begins to burn (it is possible that the darker the vampire's skin, the later the reaction begins). The vampire is smoldering, increasing black smoke coming from their body. Uncovered areas of the body are covered with red spots that grow, turning into severe burns. As seen from the 1st movie, vampires' clothes also burn. Apparently, this process can continue for some time, until the vampire's entire body is exposed to burning and disintegration of tissues into ashes. The body finally crumbles, the ashes scatter, and voila! β the vampire is gone.
In the situation with Dracula, he had stayed in the sun for at least ten to fifteen minutes, and probably his burns hadn't reached a critical level. Although we don't know what happened right after Drac finished his speech to Johnny and turned the plane around... But he still had some time left before he would have died.
Then how do vampires accept death from the sun? Of course, they can do as described above, but few vampires want to suffer like that, right? Instant death from the sun is also possible. This requires high solar radiation power. A vampire must go out into the open in clear weather right before dawn, and the first rays of the sun will cause them the most powerful damage. They'll be lucky if it only takes a few seconds or a minute to turn to dust. It's less terrible than dying by stabbing yourself with a stake in the heart.
