Dengaku Miso Pickled Camembert

We first came across this fusion side dish in the Japan Times, though it appears it’s a popular pickled cheese from Tokachino Fromage in Hokkaido, Japan. Hokkaido itself is well known for their dairy based recipes like Hokkaido milk bread (Japanese milk bread), but they also make some fantastic cheese!

The marinade is based on a dengaku style marinade (like in our miso glazed eggplant). We wanted to have a go ourselves, but swapped out the usual mellow white miso paste with the punchier, more robust red miso paste instead.

The combination is a richer umami style cheese that still holds the sweet undertone, making it a delicious addition to any charcuterie board. Having tried it with salami and crackers – we can whole-heartedly recommend!

Ingredients and substitutes

  • Camembert Cheese – Single or double cream camembert or brie work well as your cheese.
  • Red Miso Paste – We love using red miso paste as our base for the marinade. You can use whatever you have on hand though, and always adjust the amount to your liking.
  • Soy Sauce – For an extra dash of umami. Sub with cooking sake or water for a for a salt-reduced version.
  • Mirin – This sweetened rice wine helps to mellow out the salty flavours and turn the miso into a spreadable paste. Sub with a teaspoon of sugar in 1 tbsp of water.

  1. Mix the miso, mirin and soy sauce into a thick paste.
  2. Slather onto your cheese before wrapping it up with an extra layer of baking paper.
  3. Wrap up and pop into an airtight container in the fridge and marinate for a minimum of one night, all the way up to a week.
  4. Serve as is, or scrape off a little of the miso marinade for a sweeter taste.

Quick Tips

  • Smaller Cheese – This works just as well with a small 100 g / 3.52 oz wheel of cheese – just halve the marinade amount!
  • Firmness – The marinade will usually make the cheese firm up slightly, it’s perfectly normal!

Storage

Store in an airtight container for up to 7-9 days in the fridge. We don’t recommend freezing.

Can I skip the marinating time?

Totally! If you only have 5 minutes before people rock up, just slather on half the amount of marinade and serve as a quick side.

Toppings, Serving Ideas & Variations

  • Sweeter Marinade – Swap out the red miso paste for white miso paste if you want a sweeter and mellower result for your cheese. You can also skip the soy sauce.
  • To Serve – Serve with savoury crackers or biscuits, we also like it with things like sweeter fruit, nut and seed crackers. You can also serve with sliced French baguettes.
  • Flavour Variations – Feel free to come up with your own flavour combinations – you can also add things like Korean red pepper paste for spice or a few drops of rayu chilli oil. Have fun experimenting!
  • Rice Ball Filling – Makes for a great onigiri filling once sliced up!

Instructions

  • Mix the 3 tbsp red miso paste, 1 tbsp mirin and 1 tsp soy sauce into a thick paste.
  • Unwrap the 200 g camembert cheese wheel, then slather the miso marinade all around the wheel before wrapping it back up with an extra layer of baking paper.
  • Place a couple of rubber bands around the wrapping to hold the marinade in tight against the cheese, then pop into an airtight container in the fridge.
  • You can marinate the cheese for a minimum of one night, all the way up to 1 week.
  • Serve as is, or scrape off a little of the miso marinade for a sweeter taste.
