Orange Cranberry Dijon Pork Loin Roast Ingredients: 2-3 lb pork loin roast 1 cup cranberries 1/4 cup Dijon mustard 1/2 cup orange juice Zest of 1 orange 2 tablespoons brown sugar 2 cloves garlic, minced Salt and pepper to taste Instructions: Preheat the oven to 375°F (190°C). In a bowl, mix together Dijon mustard, orange juice, orange zest, brown sugar, garlic, salt, and pepper. Place the pork loin in a roasting pan and pour the sauce over it. Scatter cranberries around the roast. Roast for 60-75 minutes, until the internal temperature reaches 145°F (63°C). Let it rest for 10 minutes before serving.
