SAVE my LAZY EGGPLANT PROVOLONE & PROSCIUTTO BAKE for an easy weeknight dinner! Feel free to sub mozzarella for provolone and turkey or ham for prosciutto.

Ingredients
3 eggplants
3 tsp salt
3 tbsp olive oil
18 slices of provolone
9 pieces of prosciutto
2 cups homemade sauce

Breadcrumb Ingredients:
1 cup panko breadcrumb
¼ cup grated parmigiano reggiano
3 tbsp fresh parsley
½ tsp salt
½ tsp garlic salt
¼ tsp pepper
3 tbsp olive oil

-Preheat oven to 400F
-Keeping the stem intact and make 4 or 5 cuts length wise as shown.
-Salt each eggplant and let it sit for 15 minutes to sweat the moisture from it.
-Use a paper towel to wipe the moisture from each eggplant.
