That’s what happened to me last week when I saw @pinchofyum post a crispy rice salad. Crispy rice salad?! What?! Duh. Making pronto.

I love all kinds of salads. But a very herb-forward, Vietnamese-essenced salad with a super bright lime-y dressing has got to be top of the list.

This reminded me of one of my FAVORITE restaurants of all time- Luc Lac Kitchen in Portland, Oregon. So fresh, light and full of flavor.

Heavily inspired by Pinch of Yum but I took some creative liberties! 

Salad:
1-2 cups sliced mini peppers
2 mini cucumbers, thinly sliced
1 bunch cilantro, chopped
1 bunch green onions, chopped
1/2 cup julienned carrots
1 bunch mint, chopped

Nam khao is a popular salad from Laos, the crispy rice with the fresh herbs, the crunchy nuts and the tangy dressing tastes incredible! 😋
I slightly adjusted it to use ingredients I had at home. 😇
RECIPE (3 servings, 20min prep time):
-2 1/2 Cups cooked basmati rice 
-2 Tbsp Thai red curry paste 
-3 Tsp  oil
Mix and bake at 200C/400F for 30mins but stir halfway through.
Dressing:
-2 Tbsp light soy sauce or vegan fish sauce
-1 Chili 
-2 cloves garlic 
-juice of 1/2 lime
-2 Tbsp sugar 
-1/4 cup (60ml) water
Mix 
Else:
-a bunch of fresh mint and parsley/cilantro 
-1 cucumber, smashed and chopped 
-toasted coconut flakes and peanuts
-fried shallots
Assemble everything in a bowl and combine with the dressing.
Serve in lettuce wraps Nam Khao, Vegan Fish Sauce, Crispy Rice Salad, Asian Salads, Grain Salads, Thai Red Curry Paste, Cooking Basmati Rice, Garlic Juice, Vegan Challenge
