Use a spatula to scrape and transfer mixture into a separate bowl, wipe down the bowl with a paper towel to completely clean out, and using the same bowl whip the heavy whipping cream and powdered sugar together until stiff peaks form. Gently fold the mascarpone mixture into the whipped cream until combined. 3- Gently spoon the prepared cheesecake filling into the chilled crust, using an offset spatula to make a flat surface on the top. Chocolate Sponge Cake: •150ml Milk (Unsweetened almond milk or any milk of your choice) •15ml (1 tablespoon) White Vinegar or Lemon Juice •130g (2/3 cup) Cane or Castor Sugar •1 teaspoons Vanilla Extract •80ml (1/3 cup) Oil (sunflower/vegetable) •125g (1 cup) All Purpose Flour •25g (1/4 cup)Dutch Cocoa Powder •10g (1 tablespoons) Cornstarch •1/8 tsp Baking Soda •1tsp Baking Powder •1/8tsp Salt Method:Preheat oven to 350F, grease & line 8 inch springform pan with baking paper. In a bowl combine milk & vinegar. Let it is sit for 5 min until curdled. -Add oil, vanilla, sugar. Mix with a whisk until sugar is dissolved. -Add the dry ingredients.Mix until fully combined & smooth. Pour the batter into the pan. -Bake for 20-25 min or longer until it is firm to touch in the middle. Chocolate Cheesecake:- •330g Cream Cheese, soft(vegan cream cheese or any cream cheese of choice) •60g (1/3 cup)Cane or Castor Sugar •45g (3 tablespoons)Light Brown Sugar •14g (2 tablespoons)CornStarch •2 teaspoons Vanilla Extract •140g (3/4 cup + 1 tablespoons)Dark Chocolate, ( couverture/baking chocolate chips)( 50-55%) •120ml (1/2 cup)Whipping Cream (vegan cream or any whipping cream of choice ) Method: Combine cream cheese, sugar, corn starch, vanilla extract in a bowl. Mix using an electric whisk or paddle attachment if using a stand mixer. -Melt Chocolate in heatproof bowl, mix it with whipping cream. Mix chocolate mixture with cheesecake batter. -Pour cheesecake batter on top of baked cake & bake at 325f for 25-30 minutes. -Once it appears set around the edges, switch off the oven. Allow cheesecake to cool & set in oven for 1 hour. Chill it in fridge for 3-4 hours.
