Update java.md to resolve broken links (DataDog#14711)

remove line tab=jsonlogs#trace_id-option which is causing the URL references to be rendered as plaintext on the docs page

Updates the links to lead to the new LMS (DataDog#14710)

Links in the guides section pointed to our old LMS which we migrated from yesterday. This PR updates the links to point to the home of the new courses.
