Panaderia de Molo is famous for hojaldres, many-layered butterfly-shaped pastries that are impossibly delicate and brittle; galletas, plain biscuits that are crisp and almost paper-thin; kinihad, a plain and bland twice-baked biscuit that may be paired with molo soup; and biscocho principe, twice-baked sponge cake biscuits that are thin and crisp.
