Plant-Based Juniors on Instagram: "We’ve loved seeing you make these edamame rice balls over the past week! 🍙 And, they just so happen to be a perfect green snack food for St. Patrick’s day! ☘️ Here’s how to make ‘em: 1️⃣ Combine 1 3/4 cup water + 1 cup short grain white or brown rice (sushi rice) in a medium saucepan. Bring to a boil, cover and reduce heat to low and simmer until rice is tender. Let sit for 10 minutes to cool slightly. 2️⃣ Place 1 cup spinach + 1 cup cooked edamame + 2 tablespoons sesame seeds in a food processor and pulse until finely ground. Add in cooked rice and pulse 8-10 times until just combined. 3️⃣ Stir in 1 teaspoon each rice wine vinegar + toasted sesame oil + soy sauce (can use tamari for gluten-free and may need more.)
